One thing I've noticed during the cooking of the largest pot of jollof rice by Hilda Baci is, for everytime any of the chefs including Linda tastes the sauce, they change their hand glove and wear a new one immediately.

I paid close attention to them and I noticed it in all of them and it's very beautiful to see, talk about intentionality and hygiene. So it's freaking annoying seeing people question the hygiene of the pot and cooking process. If they paid attention to the minute detail as changing gloves after every tasting, is it the general hygiene they wouldn't pay attention to to?

I also noticed that they change their face towels at intervals.
