EGG SAUCE RECIPES
MAIN INGREDIENTS
Eggs (number of choices)
-6Fresh Tomatoes
-1 Medium Onion bulb
-Seasoning cubes (to taste)
-Fresh peppers (to taste)
-Salt (to taste)
-1 tsp Thyme
-1 tsp Curry powder
-3 minced Garlic cloves
-Small minced Ginger 3 Cooking -Vegetable oil

OPTIONAL INGREDIENTS
*Vegetables of choice: ( red/green bell peppers, green beans, carrots, spring onion, or sweet corn)
*Protein of choice: (shredded chicken, sausage, smoked fish, sardines, or corned beef)
*Crayfish (1 tbsp)
*Black pepper (1 tsp)

PREPARATION

▪Break the eggs in a small bowl, sprinkle pinch of salt in it, stir very well and set aside.

▪Wash and chop your tomatoes, peppers, onion to your choice of size and set aside.

▪Wash and slice your veggies of choice into small pieces (only if you are using them to make the egg sauce).

▪Prepare your chopped protein/meat/fish of choice and set aside.

▪️Mince your garlic and ginger and set them aside.

PROCEDURE

Step 1: Heat your vegetable oil (of choice) on medium heat for about 1 to 2 minutes, on your frying pan.

Step 2: Add in your sliced onions and stir-fry on medium heat to avoid burning for 3 minutes or until the onions translucent.

Step 3: Add in your minced garlic and ginger and stir-fry for about 1 minute.

Step 4: Add in your curry powder and thyme and other spice of choice, and continue stir-frying to avoid burning.

Step 5: Add in your chopped fresh tomatoes and chopped fresh peppers and stir-fry for 6 to 8 minutes on medium heat.
Note: When it is done, the oil will separate from the tomato/pepper mixture and the sauce will not have a raw tomato taste anymore.

Step 6: Add in your vegetables (of choice) and stir-fry for about 2 minutes.
Note: If you are using bell peppers, don't add it quick, because they tender quickly.
Note: This step is optional, only if you are using any vegetable to prepare the sauce.
Note: You can also add your protein of choice, only if you are using any of them.

Step 7: Add in your seasoning cubes (to taste), salt (to taste), other spices (of choice) and keep frying, untill the tomatoes mixture is completely done.

Step 8: Once the tomato mixtures are adequate fried, reduce the heat to low heat and pour in your whisked eggs on top of the frying tomato sauce and allow it to set for about 1 minute before stirring/scrambling it. Break the frying egg into crumbs as you fry for 2 to 3 minutes on low heat.

Step 9: You can taste for salt and other spices, and add if necessarily.

Step 10: When the egg sauce has fried properly, put off the heat and serve with any side dish of your choice.

WHAT YOUR EGG SAUCE SHOULD BE SERVED WITH

Egg sauce can be served alongside with any of following dishes:
Boiled/fried/roasted yam, plantain and more

Obe Ata Dindin (Buka Stew).

ingredients:
10 whole tomatoes
2 large red bell peppers/tatashe
4 scotch bonnets/atarodo
100ml Palm oil
2 medium-sized onions
1 teaspoon garlic powder or A garlic clove
500grams of assorted meat (beef, shaki (tripe), ponmo)
2 tablespoonful ground crayfish (optional)

Cooking directions:

Note: Before you start with the Obe ata stew cook or boil the meat you would be using and Set aside for later use
If you want to add eggs, then also boil them beforehand, peel of the shell and set aside.

Now to prepare this Buka stew
-Add the pepper, tomatoes and one onion in a blender and blend (you can also make use of canned stewed tomatoes if you don’t have fresh tomatoe). Make sure to add little water as you blend, but if you end up with a watery mixture, simply add it to a pot and boil to remove excess liquid.
-Next, place a pot on medium heat, pour in the Palm oil, heat it up until is very hot (but not smoking), then add the meat and fry until dry. Then take them out and set aside.
-Add an onion (shredded) into the hot oil, fry a bit and then add the blended tomato & pepper mix.
-Cook until the mixture loses its sour taste, or until you begin to see the oil rise to the top.
-Add the garlic powder, bouillon cubes (maggi /knorr cubes), ground crayfish and salt to taste. You can also add more seasoning if you like to.
-Mix thoroughly, cover and leave to cook for 2 mins.
-Add the fried meat, mix well, cover the pot, simmer for 5 mins and put off the heat.
-Add the boiled eggs and your Buka Stew/Obe Ata dindin is ready.

You can dish with white rice, jollof rice, cooked yam, plantain, potatoes, agidi etc.
