OFE OWERRI (IGBO)
Recipe 👇
1: Dried fish
2: Meat
3: Stock fish
4: Okazi leaves
5: Ugu leaves
6: Shrimps
7: Dried pepper
8: Cocoyam ( red type)
9: Palm oil
10: Maggi cubes
11: Water and salt
12: Crayfish(ground)
Method 👇
-Cut and wash the meat sprinkle salt and chopped onions and steam for 10 minutes in low heat.
-Then add about two cups of water and continue cooking for another 25 minutes
-Cut and wash stock fish place on pot,add a little salt and three cups of water then boil for about 40-50 minutes.
-Cut the okazi leaves into very tiny pieces after first picking,washing then allowing to dry
-Pick and wash ugu leaves,cut into pieces.
-Felt the cocoyam and wash and boil for 20 minutes,strain off water and pound for about 6 minutes.
-Remove the head and outer skin of the shrimps ,wash and set aside for later use
-Place a rinsed pot on the burner,pour in the meat,add the stock fish and water and allow to boil for 10 minutes.
-Add washed dried fish,oporo, ground crayfish, pepper and palm oil,cover the pot and allow to boil for 5 minutes.
-Stir,mix the pounded cocoyam with water from soup to form a paste,then add maggi cubes,allow to boil for another 10 minutes.
-Add ugu leaves, allow to cook for 3 minutes,add okazi leaves last and taste the soup.
-Add some salt to taste and simmer for 5 minutes,then remove from heat.
-Serve with pounded yam,fufu or eba.
