Oystercatcher Shellfish is a woman-proprietor aquaculture farm located in Horseshoe Beach, Florida. I am dedicated to farming as sustainably as possible.
I offer only locally-raised oysters and clams to individuals, restaurants, and retail. Pick-up Days/Times:

Hi Shellfish Lovers! The photo this week: Mr. Dogfish is ready for a snack. Hopefully we will have oysters in the next few weeks! I will email my customer list with updates. Hey There Shellfish Lovers! The photo this week: the brittle star (one right side up, one upside down). Often found in my clam bags and oyster cages (where these guys came from), brittle stars are fascinating to me for a variety of reasons: the fun shapes they make while ambulating; their variety of coloration in browns, greys, and oranges; and their ability to autotomize (drop a limb to escape from a predator), like several other marine creatures. You can learn more fun facts about the brittle star at Ocean Conservancy website below, such as: they have five jaws; they can live in very shallow water (such as these guys at 1.5 feet on a dead low winter tide with a north wind) to very deep water (over 19,000 feet); there are over 2,000 species found all over the world; they are known as “seafloor ecosystem engineers” for their role in reshaping the ocean bottom; they can both filter feed and eat small organisms and scavenge. https://oceanconservancy.org/wildlife-factsheet/brittle-star/ #:~:text=Although%20brittle%20stars%20and%20starfish,contains%20all%20the%20internal%20organs.
My oysters are looking better and – if the water temps stay in the growth range – I may have some of sellable size as early as late January. I will provide an update next month when I know more.

Hey There Shellfish Lovers! The photo this week: starfish pepper jelly. Working Food grew a bunch of starfish peppers (a sweet pepper similar to a mad hatter) and saved the seeds, but had no use for the flesh of the fruits. So I made pepper jelly for both of us and I now have some available for purchase (see info below). These are sealed and shelf-stable. Also new for this week: yuzu mignonette. A friend grows yuzu in his Gainesville yard and was kind enough to gift me some, as well as the excellent idea to include their zest in some mignonette.
Please be aware that I have very few clams left. If orders are large this week, I may not have any left for next Saturday (12.28), or only have limited quantities or sizes. If I do not have clams I will not be at the market on 12.28. I will have clams again in about a year. I will be back at market when my oyster babies grow up, hopefully early spring. I will keep you all informed and thank you for your support and flexibility. Live blue crabs available again this week unless temperatures are too low and they bury up, as they did a couple weeks ago.

Hey There Shellfish Lovers! The photo this week: clam babies! The seed from this fall and winter will hopefully grow up, not be taken away by hurricanes, and be available next November or December. Until then, I will have clams til sold out, which will very likely be the end of this month; I will not have them again for about a year though I should have oysters large enough to sell this spring.
The storm damage has resulted in less available clam sizes, so there are only pasta, middleneck, and topneck. I have lowered the price of the larger clams a bit to move them, so if you haven’t tried a larger clam before, now is a good time to experiment. In general, I find that even the larger clams are not rubbery as long as you are attentive to not over-cooking them. Because larger clams have larger muscles (feet and siphons - the chewier parts), you may want to cut or chop them for some applications. I usually never do this, though, unless I am making a dip, chowder, or a pilau and want to make them stretch.
With colder water temps (50-53 degrees in the mornings) the crabs have buried up. If temperatures do not increase, I may not have crabs this week but please do tell me if you would like them if they are available. Note the specialty products now includes mignonette (even though I do not yet have oysters – I know you probably need it!) and hot sauce. Clam dip and smoked mullet dip also available!

Hey There Shellfish Lovers! The photo this week: a beautiful winter morning sky. The winter sunrises and sunsets are my favorite as they are usually more colorful and longer-lasting than their summer counterparts. It is something to look forward to as Jack Frost nips at noses, hands, and feet out on the water these days. Certainly is seafood gumbo and chowder weather!
The storm damage has resulted in less available clam sizes, so there are only pasta, middleneck, and topneck listed below. Hey There Shellfish Lovers! The photo this week: a summer storm out crabbing. I never tire of the colors, textures, light/dark, shapes, and other features of clouds, especially over water. Hopefully we will not get much weather from this system in the Gulf this week. It’s been gumbo weather on the coast the past couple of days.
I’ll have live blue crab again this week, so perhaps some crab gumbo is in order (think crab meat in place of chicken, add other seafood favorites and maybe even some sausage). Folks have been enjoying them while watching the football games. Clam dip is also back, and mullet dip is here to stay for a while. They are fat now. Just be aware that I have few littleneck and middleneck each week until the size picks up on a later planting.

Hey There Shellfish Lovers! The photo this week: getting going on the morning's next box of crabs. Live blue crabs for Labor Day anyone? Lovely time for a crab boil! They are No 2’s so mostly males with some sooks (females), all between 5” and 6”, point to point. Fresh caught in Horseshoe. Many of you have asked about Hurricane Debby and the damage – thank you. Essentially that storm brought me back to about where I was after Idalia but a little worse because I did not have time to recover fully from Idalia. So essentially, I will have clams but no oysters again this year. Until November when last year’s seed is bigger, I will have few clams in the littleneck and middleneck size range, but lots of pasta and large clams – and clam dip will be back! So I will have only 2 markets at 441 in September and October, and then hopefully at 441 each Saturday November-May. No clams this week as I am still waiting on water quality to improve.

Hey There Shellfish Lovers! The photo this week: a partially albino blue crab. This guy also had some strange mottling on his belly. I have never seen one of these before in the years I’ve been crabbing but apparently one wanders into the traps once or twice a year. When they shed, the new shells are the same as the old ones. I threw him back overboard to live on – another marvel of Mother Nature.
This is the last harvest until September. I have run through most of the clams the storm left me (and I am grateful to have had any left to me at all considering); I am holding some back so I have large clams in the fall for you all.

Hey There Shellfish Lovers! The photo this week: the Florida cross-barred Venus or Chione elevata. This species is in the Venus clam family (Veneridae) – same as the clams you order – and is closely related to the Chione cancellata, which is found in the Caribbean. This guy had wandered into the last bag of campechi that I pulled when he was but a pediveliger. In the 3 1/2 years of growing that particular planting of campechi I found many other shellfish species who had found the campechi and decided to make those bags their homes. I assume then that this is a natural process in wild clam communities in soft bottoms and seagrass beds; this is one reason I left some of those campechi down there, in an area off-limits to my harvest/planting, and to which I will add more campechi.

Hey There Shellfish Lovers! The photo this week: baby Mercenaria mercenaria clams. This is the 4 mm size I normally get from the hatchery; aquaculture lease holders are required to plant a minimum number of animals per acre per year, depending on the species, and many plant significantly more. This is the tail end of the season to get babies or “seed” as we call them. There is generally a fall and spring spawn and a summer and winter growth cessation; the baby season will start back up again in the fall.
UPDATES: I will not be at market May 18th – changing the schedule up a bit to accommodate some oyster planting and clean-up. Also…taking the softshells off the list for now as we have not been catching them (hopefully this will turn around at full moon at the end of the month) BUT adding fresh, homemade clam dip for Memorial Day and June 1st weekends!!! I am doing some tinkering here as I will need to adjust my schedule for the fall season to accommodate making value-added products regularly available (such as clam and mullet dips, fresh frozen and ready-to-bake clams casino, etc.) while also doing a Saturday market (alternating between Haile and 441 as previously) and some deliveries. Also looking for your clam dip feedback as I have not offered it before. Remember it’s just me as a farmer, wholesaler, distributor, value-added processor, and retail/marketer so efficiency and strategy are key, so I would love to hear your feedback on what might make the difference between your ordering or not. My clams – freshly harvested, steamed open and chopped – hand-blended into cream cheese with chopped sweet onion from Promised Land Farm in Alachua; their own clam juice; Marjorie’s Red-bristled Fiend hot sauce; fresh squeezed lemon juice; Worcestershire sauce. 8 oz deli container. A refrigerated product, best when eaten within 3 days.

Marjorie’s Red-bristled Fiend: $12
A variation of a good friend's North Mississippi Hill Country hot sauce, inspired by Marjorie Rawlings and her Cross Creek story of the red pig who ate her fluffy ruffle petunias for the last time. Sassy, slightly sweet and bright. Ground fresh chili peppers from Promised Land Farm, vinegar, Straughn’s honey, bourbon, fresh garlic, dried pineapple, dried mango, salt, mustard powder, ginger powder. 8 oz jar. A refrigerated product.

TOPNECKS: Jones Rack area, mixed sizes (≥1 1/4”): order by 20 count. $18/20 clams (with a couple extry of course).
MIDDLENECKS: Jones Rack area, mixed sizes (1 1/8” – 1 1/4"): order by 25 count. $20/25 clams (with a couple extry of course).
LITTLENECKS: Jones Rack area, mixed sizes (7/8” – 1 1/8”): order by 25 count. $10/25 clams (with a couple extry of course). Examples: Order 25 clams = $10; Order 50 clams = $20
PASTA: Jones Rack area, mixed sizes (≤7/8”): order by 50 count. $10/50 clams (with a couple extry of course).
*Note: If you would like to consume your clams raw please let me know and I will use the same time/temperature controls as the oysters.

Oystercatcher Shellfish is a product of my love of the water and the natural world, and my being blessed with generous friends and mentors who are also excellent captains of shrimp, clam, crab, and mullet-fever boats. As we say, "We sure have the best office," and Mother Nature never ceases to deliver moments of wonder, beauty, and power. I can't even begin to tell you all the amazing things I have seen, or all the adventures I have had. She is also an excellent teacher, and asks us to confront ourselves and especially our shortcomings. Working on the water makes me a better person, and offers me a sense of contentment and accomplishment that nothing else has. I like that I am contributing to oyster bar restoration because I grow a natural oyster that spawns - that increases the number of baby oysters swimming around out there looking for a home. I also return my shell - and customer shell if they bring it to me - to the sea, which creates all kinds of homes for all kinds of creatures, not just baby oysters looking to set.
Oystercatcher is a new venture for me and it is small-scale; I am dedicated to doing it as sustainably as possible.
