Puntarelle are a traditional Roman vegetable only in season for a couple months a year. A type of chicory known for its crunchy texture and slightly bitter taste, its official name is Cicoria Catalogna.
To prepare them, slice the stems into thin strips, soak in ice water for a few hours to curl, and toss with garlic, anchovies, olive oil, vinegar, and a pinch of salt. A perfect Roman salad!
