🌟Shrimp Spring Rolls🌟

Tasty and refreshing spring rolls are the perfect snacks for the hot summer days. Get creative with your favorite ingredients and munch on the yummy goodness! 😋🌿

INGREDIENTS:
6-12 rice papers
12 oz large shrimp, peeled and deveined
4 oz butter lettuce
6 oz red bell pepper, thinly sliced
6 oz cucumber, thinly sliced
5 oz rice vermicelli, or any other type of noodles you prefer.
(Add or sub veggies to your liking)

Peanut Sauce:
1/4 cup smooth peanut butter
1 tbsp low sodium soy sauce
1 tbsp rice vinegar
1 tbsp honey
1 tbsp water
chopped peanuts for garnish

DIRECTIONS:
- Bring a pot of water to boil and add the shrimp. Cook for 3 minutes until they turn pink and are completely cooked through. Transfer out and place in an ice bath to cool. Then cut them lengthwise in half.
- Bring another pot of water to boil again and add the rice vermicelli. Cook for 3 minutes until al dente. Transfer out and drain under cold water. Use a pair of scissors to cut them into smaller sections.
- Thoroughly wet the rice paper with cool room temperature water and place it on a flat surface. Add lettuce, cucumber, red bell pepper, and cooked rice vermicelli to the bottom. Lift the edge of the rice paper and roll it over once while tucking the veggies in. Place three shrimp and fold the two sides over. Roll it all the way up and seal the edges.
- Serve with peanut dipping sauce and enjoy!
