Today we’re celebrating the incredible Maldon Oysters, harvested from the famous Blackwater Estuary in Essex.

With a tradition dating back to Roman times, Maldon oysters are renowned for their clean, fresh flavour, deep cupped shell and smooth and meaty texture, thanks to the unique mineral-rich waters they call home.

They’ve been a British favourite for centuries - and they always get the party started on our Gourmet Nights.

High above on our rooftop, there’s a hive of activity…The Chapter One bees are busy making the most delicious honey 🐝 for us to use in several dishes and on the cheese trolley 🍯🧀

On Tuesday 1st September, we’re welcoming one of our own back to the Chapter One kitchen for a truly special, one-night-only dining experience.

More than 20 years ago, Mick Binnington began his journey at Chapter One as a commis chef under Andrew McLeish, where he developed the skills, discipline and passion that would shape an exciting career.

Since then, he’s worked alongside some of the UK’s most celebrated chefs, earned a Michelin Bib Gourmand for his own restaurant, and become one of Britain’s most respected chefs.

Join us from 6.30pm for an unforgettable evening celebrating the very best of English food and wine.
