This is the ultimate chocolate cake!
Chocolate mud cake, that has the texture of a chocolate brownie, due to the amount of melted chocolate that goes into it.
Then over a kilo of melted Belgium milk chocolate in the ganache filling.
Normal and gluten free cupcakes with chocolate buttercream topping, then lashings of seasonal fruit.
The main cake is ideally served with cream as a luxurious dessert for your guests.

A birthday cake for a football fan.
Vanilla sponge filled with raspberry jam and swiss meringue buttercream mixed with a little white chocolate ganache for stability. Covered in white chocolate ganache then sugarpaste.

Vegan has never been so good.
Vegan chocolate fudge cupcakes, topped with Vegan amaretto buttercream.

Red velvet sponge, filled with swiss meringue buttercream and white chocolate ganache. Decorated in a mini mouse style.

SWISS MERINGUE BUTTERCREAM!
Swiss meringue buttercream is a lovely alternative to normal buttercream, its silky smooth and not too sweet.
This batch will be mixed together with white chocolate ganache to make a luxurious cake filling.
The egg whites used in this recipe are from a local free range farm, it's good to know where your ingredients come from if possible, it's also great for animal welfare.
It's a bit of a long process but really worth it.
First you dissolve the caster sugar with the fresh egg whites over a barely simmering ban marie, once the sugar has dissolved and it has reached a temperature of 70° keep whisking for another two minutes.(This process kills off any bacteria)
Then transfer to your electric whisk and whisk on high until the bowl is cool and it is lovely and thick (about 10 minutes)
Change to a paddle attachment, then gradually add the butter bit by bit making sure each amount if fully encorparated before adding the next.

Chocolate basket ball cupcakes. Baked in orange cake cases for added effect, and hand piped buttercream.

10 inch square coffee cake. A subtle coffee sponge brushed with coffee syrup, then filled with coffee buttercream, covered in milk chocolate and coffee ganache and fondant.
It was also so lovely to receive this lovely thank you card. 😊

A two tier cake and 6 gluten free cupcakes, for a very special couple on their Golden wedding anniversary.
Bottom tier is vanilla sponge, strawberry conserve and white chocolate buttercream, and the top tier is lemon sponge, lemon curd and white chocolate buttercream. Decorated with a delicate handmade flower and leaves.

Also introducing a handmade wooden cupcake display stand for wedding or party occasions. It holds between 40/50 cupcakes, and folds flat.
You can hire this display stand for £10, with a £30 refundable deposit.

Vegan cupcakes don't need to be dry and tasteless.
These rich chocolate vegan cupcakes have a rich, moist chocolate sponge, and a lovely light chocolate topping. The topping is made from a plant base alternative to butter, with vegan chocolate.

A light caramel sponge, with Salted caramel centre, then swirled with caramel buttercream and drizzled with Salted caramel and fudge pieces. Xx

A rich chocolate cake filled and covered in milk chocolate ganache. Then covered in fondant and decorated with a real bottle of prossecco, edible white chocolate hearts, mini chocolate bars, silver chocolate balls, buttercream, and mini meringues. # # #

Bisscoff cupcakes.
A light sponge made with brown sugar, then filled with a spoonful of Bisscoff. Decorated with Bisscoff buttercream, and topped with a Bisscoff biscuit.
They smelt soooooo good. Xx

Gin and tonic cupcakes.
Gordon's gin is first mixed into the sponge mixture. Once baked, the cupcakes are pierced several times, then drizzled with a gin infused sugar syrup. Then finished off with gin infused buttercream and decorated with grated lime, straw and a pipette filled with more Gordon's gin.
Definitely contains alcohol. 😉🍸🧁
