Happy Pancake Day!

🥞 Are you a thin or a thick lover?

🥞Thick & fluffy all the way here!!
🥞 For these we used 200g self-raising flour, 1 ½ tsp baking powder, 1 tbsp caster sugar, 3 large eggs, 25g melted butter, plus extra for cooking, 200ml milk . (Our daughter likes to add a dash of vanilla too!)
🥞Mixing the wet and dry ingredients in separate bowls helps avoid overmixing after you’ve combined them. Overmixing leads to tough, heavy pancakes which only our chickens like!
🥞 Keep a few lumps in your batter to minimize gluten formation, mix the wet ingredients into the dry just until the batter is evenly moistened but there should still be lumps.

As if you ever need an excuse to enjoy chocolate, it's National chocolate soufflé day today.....well hello Monday !

🤎 The word soufflé is the past participle of the French verb souffler, which means “to blow up” or more loosely “puff up” which describes a souffle perfectly.  

🤎 A soufflé is a lightly baked cake made with egg yolks and beaten egg whites that are combined with other ingredients to make the dish either a savory main dish or a sweet dessert.

🤎 But today is all about the chocolate one!!
We like to think of it as a rather lighter posher brownie and let's be honest who doesn't love a brownie!

🤎 The trick is to not over bake it so you get the heavenly molten chocolate oozing out.

Working with wholegrain is considered a little more tricky as you need to maintain a good hydration to ensure you don't end up with a really dense loaf.
Wholegrains have great nutritional benefits because you are getting ........well, all of the grain! Stoneground wholemeal flour is best as nothing is lost in the milling process.
One of the highlights of this class is a visit from our farmer neighbour, Simon. He grows wheat locally and pops in to talk about this, and we mill some of his grain to make the Soda bread too!

Let's talk Baguettes!!

🇲🇫 We all know along with wine & cheese and of course a beret.....well it's practically synonymous with France!!
🥖 Baguette means stick, wand or baton
🇫🇷 it's actually an Austrian invention but the French would probably argue not! (over a glass of wine)
🥖 Baguettes are baked using steam to get that lovely light fluffy inside & crispy crust
🇫🇷 We use traditional french T55 flour to give that authentic taste
🥖 We lived in France for 8 years and learned to bake by traditional artisan methods
🇲🇫 In 1993 the French passed a law which states how traditional Baguettes should be made - just flour, yeast, salt, water and strictly made at the place they are sold - love this!
🥖 If you buy a Baguette and it's not rock hard the next day - Trust us, this is not a real Baguette!
🇲🇫 We teach the mighty Baguette on our 40 minute online class or on our Introduction to bread making class if you want to learn more & enjoy real bread ! 🥖🥖🥖

Meet Maneesh - It's a Lebanese flat bread, that's quite simply delicious!
It's crispy on the outside and soft and light on the inside but its the zaatar topping that takes this to another level and makes it irresistibly moreish!
We teach this somewhat unknown beauty on our Mediterranean breads class along with fougasse, pitta & pizza.
On the class we blend our own zaatar using a blend of sesame seeds, sumac, oregano & marjoram, thyme, salt & oil. It has a pleasing earthy, herby, tangy, salty yum yum yum taste that always leaves you wanting more!

It's great on its own but fabulous as part of a mezze with oils & dips .......now that's got us dreaming of long warm summer nights !
