**Kerdas** is a type of traditional Moroccan sausage made from sheep offal and special seasonings.

1. **Cleaning**: The offal is cleaned rigorously to remove any impurities.
2. **Seasoning**: The cleaned offal is chopped into small pieces and mixed with a blend of spices and herbs.
3. **Stuffing**: The seasoned mixture is stuffed into the cleaned intestines, forming sausages.
