Mongolian beef, rice and honey glazed carrots 🥩 🍚 🥕 🍯

Ingredients:

Flank beef steak, skirt steak, sirloin steak
Corn starch
Ginger
Garlic
Red chili pepper
Green onion
Oil

Beef marinade:
Regular soy sauce
Black pepper
Baking soda

Mongolian beef sauce:
Hoisin sauce
Regular soy sauce
Brown sugar
Sesame oil
Corn starch
Cold water
Toasted sesame seeds

Step by step:

1. Thinly slice beef against the grain into 0.75 cm thick pieces & 2 inches in length. Do not slice any thinner.
2. Marinate beef strips with Marinade ingredients & set aside.
3. In a small bowl, combine sauce ingredients.
4. On a large plate or large bowl, add cornstarch & generously dredge beef slices into starch until well coated. Transfer coated pieces onto a large plate. Repeat this process until all your beef is coated.
5. In a large skillet on medium heat, add & heat oil.
6. Once oil is hot, fry beef in a single layer in batches 1 minute on each side until slightly crispy. Immediately spread beef apart to prevent sticking.
7. Remove cooked beef from oil & set aside on a large plate or baking tray lined with paper towels to absorb excess oil. Discard excess oil leaving 1 teaspoon in the pan.
8. Over low heat, sauté ginger, garlic, red chili for 10 seconds.
9. Pour in sauce to reduce & thicken.
10. Once thick, add beef & mix to coat evenly. Garnish with green onions.
11. Remove off heat. Garnish with sesame seeds

Honey glazed carrots

Ingredients: 
2 pounds carrots, peeled & cut to 1 ½” in length and ½” thickness 
3 tablespoons olive oil
¼ cup honey
2 large cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon cinnamon
½ teaspoon cumin
1 teaspoon salt
¼ teaspoon pepper
Fresh parsley, for garnishing (optional)

Step by step:
Preheat your oven to 425°F.

In a small jar, whisk together the honey, olive oil, spices, garlic salt & pepper.

Add the peeled & chopped carrots to a bowl & toss with your honey mixture.

Add the carrots to a parchment-lined sheet pan, pour any remaining honey mixture over the top, & roast in the oven for 25 minutes.

Remove from oven & toss again.

Set your oven to broil & broil for 3-5 minutes

Remove from oven, toss, top with fresh parsley. ENJOY!!

Ginger Honey Glazed Salmon & Slaw 🫚🍯🥗

One of my favorites yet, I couldn’t even wait to make it properly to share with you haha.

Ingredients:
* Salmon
* Coconut Aminos
* Sesame Oil
* Ginger and Garlic
* Sriracha
* Honey
* Veggies: Julienned carrot, cucumber, and red cabbage
* Cilantro
* Roasted Cashews (Didn’t have but you could use any nuts)

Marinade
In a large bowl, whisk together coconut aminos, sesame oil, grated ginger, garlic, sriracha, and honey. Pour most of the marinade over the salmon fillets and let them marinate for 30 minutes. Reserve 1/3 cup of the marinade for the slaw.

Cook the Salmon
Preheat the oven to broil. Heat a cast iron pan with avocado oil over medium-high heat. Add the salmon, skin-side down, and cook for 1 minute. Broil the salmon in the pan for 6 minutes, or until cooked through.

Make the Slaw
While the salmon cooks, combine the carrot, cucumber, red cabbage, cilantro, and green onions in a bowl. Pour the reserved marinade over the slaw and toss to combine. Serve the slaw alongside the salmon.

Honey Garlic Glazed Salmon with stir fried rice & Veggies 🍣 🍚 🥗

Ingredients:
2 salmon filets 🍣
1/2 tsp kosher salt 🧂 
1/2 tsp black pepper pepper 
1/2 tsp smoked paprika (or regular paprika)
1/2 tsp thyme 🍃
1/2 tsp Parsley 🌱
1/2 tsp Basil 🌿
3 Tbsp butter 🧈 
2 tsp olive oil 
6 cloves garlic minced 🧄
1/2 cup honey 🍯 
3 Tbsp water 💧
3 Tbsp soy sauce
1 Tbsp sriracha sauce 🌶️
2 Tbsp lemon juice 🍋
1 cup of rice 🍚
Vegetables (whichever you prefer) veggies 🥦 🥕
🫛
2 eggs 🥚

Step by step:
1. Pat salmon filets dry and season with spices on all sides.
2. Heat butter and oil, then add garlic, water, soy sauce, sriracha, honey and lemon juice.
3. Make the rice.
4. When hot, add salmon filets (skin side down if your filets have skin), and cook 3 minutes.
5. While salmon cooks, use a spoon to baste the filets.
6. Sauté vegetables, start frying the rice on a pan
7. Push rice to the side of the pan or make in a different pan whatever you like and make your eggs.
8. Add cut up veggies and mix all together.
9. Broil for 5-6 minutes, until salmon is sticky sweet, slightly charred, and cooked to desired doneness.

✨Avocado Toast with Shredded Egg & Pico De Gallo✨

Ingredients:
- 2 slices toast 🍞
- 1 avocado 🥑
-2 hard-boiled eggs 🥚
-1 Tomato 🍅
-1/4 of an onion 🧅
- 1 tbsp grated Parmesan 🪤
- lemon juice 🍋
- 1 tbsp finely chopped chives
- Salt flakes + pepper to taste🧂
- Tajin
-Olive oil for toasting the bread 🧈

Steps:
•Boil the eggs for 11 minutes 🥚
•Mash or cut the avocado + tomato and onion 🥑🍅🧅
•Add lemon juice + Salt & Pepper 🍋 🧂
•Toast up the bread in a pan coated with olive oil or butter 🍞🧈
•Add Avocado + Pico de gallo 🥑🍅🧅
•Add shredded egg 🥚
•Add grated Parmesan 🪤
•Garnish with chives
•Season with Tajin

Sticky grilled chicken and veggies 🍗🥗

Ingredients:
•Chicken breasts
•Soy sauce
•hoisin sauce
•Garlic
•Brown cooking sugar
•Vinegar
•Olive oil
•Vegetable oil or butter (depending on what u prefer)
•Honey
•Salt
•Pepper
•Onion powder
•Basil
•Cornstarch

Veggies:
•Broccoli
•Green beans
•Peas
•Carrots
•Cauliflower

Prepping chicken breasts:
•Slice the chicken breasts into thin pieces (not too thin)
•Season with salt and pepper.

Prepping sauce:
In a bowl add:
•Soy sauce
•Hoisin sauce
•Garlic
•Brown cooking sugar
•Vinegar
•Olive oil

Veggie prepping:
•Cut up all the veggies however you like.

Cooking process:
•Turn the stove on medium heat add pan with vegetable oil.
•Add chicken slices but don’t let them cook too much.
•Take chicken slices out of pan on the side temporarily
•Add sauce mixture and mix
•Add chicken slices to pan and sauce and let them sit for a bit on each side
•In a small cup add a bit of cornstarch in a small cup of hot water and mix really well
•Add the cornstarch water in pan and mix and pour sauce over chicken with a spoon until it’s done to your liking.
•In a small pan add butter and honey if you like the sautéed veggies sweet. On low heat
•Once butter is fully melted turn the stove up to high heat
•Start adding all the veggies
•Make sure they don’t sit long, mix as they sauté or Caramelize
•Add veggies to your plate and bon appetit 😋

Orange chicken 🍊🍗

Ingredients:
* Chicken breasts or thighs
* Cornstarch
* Green onions (sadly didn’t have)
* Vegetable oil

Orange sauce ingredients:
* Freshly squeezed orange juice.
* White vinegar or rice vinegar
* Brown sugar
* Soy sauce
* Garlic
* Ginger powder
* Sesame seeds
* Orange zest

Step by step:

1. In a small bowl, combine sauce ingredients. Mix well and set aside.
2. Do not pat chicken thighs dry, some moisture is needed for the next step (See Notes below for more information). Slice thighs into bite size pieces, about 1.5 x 1.5-inch-wide pieces (about 6-8 pcs per thigh, depending on size).
3. Transfer pieces of chicken into a large bowl, followed by cornstarch. Mix to coat each piece evenly with tongs.
4. In a wok or large skillet on medium high heat, add vegetable oil. Allow oil to get hot.
5. Carefully lower coated chicken into oil and quickly spread apart. Once chicken is spread apart, do not move the pieces around. Allow pieces to sear and form a golden crust, about 5-6 minutes on each side.
6. Once a golden crust has formed, flip chicken pieces over and cook on the other side until golden brown (about 10-12 minutes in total).
7. Remove and transfer fried chicken onto a wire rack resting on a baking sheet or a plate lined with paper towels to drain off excess oil. Pour out any excess oil from pan.
8. In a pan set over medium high heat, pour sauce in. Stirring consistently until the sauce bubbles and thickens, about 2 minutes.
9. Mix in fried chicken until pieces are coated in sauce. Finally garnish with green onions I didn’t have any but next time for sure!

Sunny side up eggs, bacon, seasoned avocado with a side salad.

I start with making my bacon and I prefer to use the oven cause it’s so much better.

•Preheat oven to 250 degrees c.
•Line large baking sheet put bacon slices.
•Season the bacon however you like I use salt, pepper, a tiny bit of garlic powder and onion powder (all to taste).
•Cook the bacon for 10-20 minutes, depends on how crispy you like your bacon.

Then I start cutting up the veggies for the salad.

•I used lettuce, cucumber, tomato, onion, radicchio. I seasoned it with salt, pepper, garlic powder, onion powder and apple cider vinegar and lemon.

Then I cut and season the avocado.

•Cut Avocado into thin slices and season with salt, pepper, cumin, paprika, oregano, pinch of garlic & onion powder then I add either lemon or balsamic vinegar or balsamic glaze.

The last step is making sunny side up eggs because I like them fresh off the pan.

•Make your sunny side up eggs however u like them. I like the yolk like 60% runny.
•Season with salt, pepper, garlic powder, onion powder and oregano.

Sorry I haven’t been as active as I hoped I’d be but I’m happy to say I just moved to my new own house y’all!! I know right exciting stuff! But because I just moved so I didn’t have some of the ingredients and I had to improvise. Still bomb I’d honestly give it a 8/10 but could be better with the right ingredients I’ll do a proper post of this with full recipe and right ingredients hehehe ☺️🥰
