My kids love Khitchdi/Khitchri rice and I haven’t honestly made khuri with it because I’m the only one who eats it so I always get my mum to send me a little when she makes. But it was high time I tried it out for myself, so if you’re a kitchen beginner this is an easy one to try. It’s a little greener than my mum’s one because of the coriander and it’s delicious!! I adapted the recipe from one of my go-to recipe books, the green food with flair. Khuri from Food with Flair adapted by @fehmz In a blender add: 1 cup yoghurt 1 green chilli 1/2 tsp turmeric 1/2 tsp salt 1/4 cup milk 1 tblsp flour (if you want a thick Khuri) 1 green chilli Handful of fresh coriander Blend well. Now in a sauce pan on medium heat add: 2 tblsp ghee 1 tsp cumin/jeera seeds 5-6 curry leaves 1/2 tsp mustard seeds Heat until seeds just start to pop then turn down low, add your blended yoghurt in and start mixing immediately. Add some water into your blender, swirl to pick up any remaining sauce and pour into your pan. Cook until slightly thickened. Taste for salt. Enjoy! Microwave mug cake, cupcake,baked donut
5 Tbsp (Tbsp flour plus 1Tbsp cocoa)
3 Tbsp sugar
2 Tbsp oil
1 Tsp baking powder
1 Tbsp milk
1 egg
few drops vinegar (optional)
mix and microwave for 1.30 second or 2 depending on the power of your microwave.
