Spelt loaf (almost) all the way:
100 gr wholemeal spelt levain
200 gr bread flour
250 gr white spelt flour from .cz
60 gr sprouted spelt berries
370 gr water
11 gr salt.

Crusty bread roll, too cute to eat 😋

Good flour, good panettone 🧡
After using it for months I realize that this flour from .dallagiovanna would like higher hydration level and longer autolyse to be fully hydrated.
More test batches to go but so far, this is the best one 🧡
