THIS WEEKS TERM IS ICEWINE
🍷 The Germans invented “Eiswein” or
wine that is made from frozen grapes.
🍇The grapes are left on the vine into the winter, and eventually the water in the grapes will freeze.These frozen grapes are quickly picked and pressed, so
that the juice made is very high in sugar, which is then made in to wine, which is luscious and sweet.
🍷The main grape for ice wine is Riesling
🍇Harvest often takes place overnight (about -8 degrees) at a time of year when the vineyards are usually blanketed in a
thick layer of snow.

THIS WEEKS TERM IS DECANT
Decanting means slowly and steadily pouring
the wine from the bottle onto another vessel. It need not
necessarily be a fancy vessel, it is what is in the vessel that
matters, after all!
Decanting is done mainly for two reasons:
1. To separate the sediments, if any: Decanting helps remove
sediments usually found in port and older red wines. They
are not harmful, but are not pleasant either and may alter the
taste of the wine.
2. Let the wine 'breathe': When wine comes in contact with
oxygen in the air, its aromas and flavours become more
pronounced and the tannins smoothen out. Much like what a
swirling does to wine at tastings.
Decanting can be done anywhere between 10 mins to 4
hours prior to drinking. Sometimes, it is advised to decant
almost a full day prior, as seen in Madeira's case.
Be sure to taste the wine before decanting, so that you can
observe and understand the changes after a few hours. If
there are no aromas, or the wine is highly tannic or it smells
funny, decant it and try again after 10 mins. It should help in
opening up the aromas and softening the tannins. If not
much has changed, wait for another 10 mins and try again.

during fermentation. Sulphur

These aromas, like all aromas in wine, can be attributed to the terroir or the winemaking process.
Most red wines like
🍷Pinot Noir
🍷Syrah
🍷Sangiovese
🍷Merlot,
🍷Tempranillo
have some kind of earthy aroma or flavour and
this makes them an excellent pair for grilled and rustic food.
