🌶️ Garhwali Bhang ki Chutney (H**p Seed Chutney)
🥣 Ingredients
Bhang seeds (h**p seeds) – 2 tbsp
Garlic – 4–5 cloves
Green chilli – 1 (optional)
Lemon juice or fresh lemon grass / galgal juice – 1 tbsp
Salt – to taste
Water – as needed
🔥 Method
Dry roast bhang seeds on low flame till they start cracking and release aroma.
Let them cool slightly.
Grind roasted bhang seeds, garlic, green chilli, and salt using a stone grinder (sil-batta) or mixer.
Add lemon juice and little water to make a thick chutney.
Taste and adjust salt or sourness.

Creamy Tomato Chicken Pasta (Spaghetti)
📝 Ingredients (Serves 2–3)
Spaghetti – 200 g
Chicken breast – 250 g (sliced)
Olive oil – 2 tbsp
Garlic – 4 cloves (finely chopped)
Onion – 1 small (finely chopped)
Cherry tomatoes – 1 cup (halved)
Tomato puree – ½ cup
Fresh cream – ½ cup
Red chilli flakes – ½ tsp (adjust to taste)
Black pepper – ½ tsp
Italian seasoning / mixed herbs – 1 tsp
Salt – to taste
Parmesan cheese – for garnish
Fresh basil or parsley – for garnish
👩‍🍳 Method
Cook pasta
Boil spaghetti in salted water until al dente. Drain and keep aside.
Cook chicken
Heat 1 tbsp olive oil in a pan. Add chicken, salt, and black pepper.
Grill or sauté until golden and cooked through. Remove and keep aside.
Prepare sauce
In the same pan, add remaining olive oil.
Sauté onion until soft, then add garlic and cook till fragrant.
Add cherry tomatoes and cook until slightly soft.
Make it creamy
Add tomato puree, chilli flakes, herbs, and salt.
Simmer for 3–4 minutes, then add fresh cream and mix well.
Combine
Add cooked pasta and grilled chicken to the sauce.
Toss gently until everything is well coated.
Garnish & serve
Top with grated Parmesan and fresh basil. Serve hot 🍝
