Ingredients

For cake:
1. Flour: 1.5 cups / 190g all-purpose flour
2. Sugar: 1 cup / 200g granulated sugar
3. Baking powder: 1.5 tsp
4. Salt: ½ tsp
5. Eggs: 3 large, room temp
6. Yogurt or sour cream: ½ cup / 120g. Makes it super moist
7. Oil: ½ cup / 120ml. Oil > butter for lemon cakes. Stays soft in fridge
8. Lemon zest: From 2 large lemons.
9. Lemon juice: 3 tbsp fresh
10. Vanilla: 1 tsp

For glaze - optional but yum
1. Icing sugar: 1 cup / 120g
2. Lemon juice: 2-3 tbsp
