Pineapple Cream Cheese Bundt Cake
Ingredients:
For the Cake:
1 box (15.25 oz) yellow cake mix
1 (3.4 oz) box instant vanilla pudding mix
4 large eggs
1 cup crushed pineapple, drained
1/2 cup vegetable oil
1/2 cup sour cream
1 teaspoon vanilla extract
1 teaspoon baking powder
For the Cream Cheese Filling:
8 oz cream cheese, softened
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
For the Glaze:
1 cup powdered sugar
2-3 tablespoons pineapple juice
Optional: toasted coconut for garnish
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan.
Make the Cake Batter:
In a large mixing bowl, combine the yellow cake mix, instant vanilla pudding mix, eggs, crushed pineapple, vegetable oil, sour cream, vanilla extract, and baking powder. Mix until well combined.
Prepare the Cream Cheese Filling:
In a separate bowl, beat together the softened cream cheese, granulated sugar, egg, and vanilla extract until smooth and creamy.
Layer the Batter and Filling:
Pour half of the cake batter into the prepared Bundt pan. Spread the cream cheese filling evenly over the batter, then top with the remaining cake batter.
Bake the Cake:
Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for about 15 minutes before inverting it onto a wire rack to cool completely.
Make the Glaze:
In a small bowl, whisk together the powdered sugar and pineapple juice until smooth. Adjust the consistency with more juice or sugar as needed.
Glaze the Cake:
Once the cake has cooled, drizzle the glaze over the top. If desired, sprinkle toasted coconut on top for added texture and flavor.
Serve:

Chicken Fried Chicken Recipe
Ingredients
6-8 thin sliced chicken breasts
2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 1/2 cup buttermilk
1 egg
1 Tbs hot sauce
Oil for frying
Gravy:
1/4 cup reserved oil from frying
1/3 cup flour
2 cup milk
Salt & pepper
Instructions
Heat oil in deep fryer or large pan on stove a few inches deep to 325.
In large bowl whisk together your flour, baking powder, baking soda, salt, pepper and garlic powder.
In another bowl whisk together buttermilk, egg and hot sauce.
Dredge your chicken in the flour mixture then dip into the egg mixture than back into the flour mixture making sure to press down flour to get stuck on the steak real good.
Place chicken in pan/deep fryer and fry on each side 3-5 minutes until golden brown, remove and drain on paper towel lined plate, repeat with all chicken.
To make your gravy, in large pan add 1/4" of oil from cooking and heat on medium-high, stir in your flour until absorbed and cook for about 1 minute.
Slowly add in your milk whisking to blend and heat until thickened then stir in salt and pepper to desired taste.
Pour gravy over individual chicken before serving.

Grilled Chicken Thighs with Fresh Herb Marinade
Ingredients:
1/2 cup fresh cilantro
1/2 cup fresh parsley, chopped
1 tablespoon fresh oregano
1 small shallot, peeled
2 cloves garlic, peeled
1/2 jalapeño pepper, seeded
1 tablespoon lemon juice
1 tablespoon vinegar
1/2 cup oil
1 teaspoon salt
Fresh ground pepper to taste
2 lbs boneless chicken thighs
Instructions:
In a food processor, combine the cilantro, parsley, oregano, shallot, garlic, and jalapeño.
Add the lemon juice, vinegar, oil, salt, and pepper. Pulse until well combined and finely chopped.
Place the chicken thighs in a baking dish. Season with salt and pepper, and cover with 1/4 cup of the chimichurri sauce. Turn the chicken to coat it completely. Marinate for 20 minutes to 24 hours in the refrigerator.
Remove the chicken from the refrigerator and allow it to come to room temperature slightly. Heat the grill to medium-high.
Grill the chicken for about 5-6 minutes per side, until the juices run clear.
Serve with extra chimichurri on the side.

Crispy Jalapeño Popper Chicken Alfredo Taquitos 🌶️🧄🧀
Creamy, cheesy, and spicy shredded chicken rolled into golden-baked taquitos with a crispy Alfredo breadcrumb topping—perfect for dinner or party bites!
Ingredients 🛒
2 cups cooked, shredded chicken
1/2 cup cream cheese, softened
1/4 cup jarred or fresh jalapeños, diced
1/2 cup Alfredo sauce (store-bought or homemade)
1 cup shredded mozzarella or Monterey Jack cheese
8–10 small flour or corn tortillas
1/2 cup seasoned breadcrumbs
1 tbsp melted butter
Chopped parsley (for garnish)
Directions 👩🍳
1️⃣ Make Filling: In a bowl, mix shredded chicken, cream cheese, jalapeños, 1/4 cup Alfredo sauce, and half the cheese.
2️⃣ Assemble: Warm tortillas slightly to prevent cracking. Fill each with a few tablespoons of the chicken mixture and roll tightly.

🍝 Creamy Ricotta Beef Stuffed Shells Pasta 🍝
📋 Ingredients:
🍖 1 lb ground beef.
🧀 1 cup ricotta cheese.
🧀 1 cup shredded mozzarella cheese.
🧀 1/2 cup grated Parmesan cheese.
🥚 1 large egg.
🧄 2 cloves garlic, minced.
🌿 1/4 cup chopped fresh parsley.
🧂 1/2 tsp salt.
🧂 1/4 tsp black pepper.
🍝 20 jumbo pasta shells, cooked and drained.
🍅 3 cups marinara sauce.
🥛 1 cup heavy cream.
🧀 1/2 cup grated Parmesan cheese.
📝 Instructions:
1️⃣ In a large skillet over medium heat, cook the ground beef until browned and cooked through. Drain any excess fat. 🍽️
2️⃣ In a large mixing bowl, combine the cooked ground beef, ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, egg, minced garlic, chopped parsley, salt, and black pepper. Mix until well combined. 🥄

Mini Strawberry Crunch Cheesecake Bites
Ingredients:
For the Crust:
1 cup graham cracker crumbs
2 tbsp granulated sugar
4 tbsp unsalted butter, melted
For the Cheesecake Filling:
8 oz cream cheese, softened
1/3 cup granulated sugar
1/4 cup sour cream
1 large egg
1 tsp vanilla extract
1/2 cup chopped fresh strawberries
For the Strawberry Crunch Topping:
10-12 Golden Oreos, crushed
2 tbsp freeze-dried strawberries, crushed
3 tbsp unsalted butter, melted
For Garnish (optional):
Whipped cream
Sliced fresh strawberries
Directions:
Prepare the Crust:
Preheat the oven:
Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners.
Make the crust:
In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until combined. Press about 1 tablespoon of the mixture into the bottom of each muffin liner.
Bake the crust:
Bake the crust for 5-7 minutes until lightly golden. Remove from the oven and set aside to cool while preparing the cheesecake filling.
Prepare the Cheesecake Filling:
Beat the cream cheese:
In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.

✅Lemon Blueberry Loaf
♦️Ingredients
1 ½ cups plus 1 tbsp all purpose flour
2 tsp baking powder
3 large eggs
1 cup granulated sugar
1 cup plain yogurt or sour cream
½ tsp salt
½ tsp vanilla
½ cup vegetable oil
2 tsp lemon zest
1 ½ cups fresh or frozen blueberries
Lemon Glaze/Syrup
2 to 3 tbsp lemon juice
1 cup sifted confectioner’s sugar
♦️How To Make Lemon Blueberry Loaf
Preheat the oven to 350*
Grease the sides and bottom of a loaf pan
Sift together all dry ingredients for the bread
In a large bowl, mix together all the moist ingredients
Slowly add in the dry ingredients
In a separate bowl, add the tbsp of flour to the blueberries and fold gently into the batter
Pour the batter into the prepared pan
Bake for 50 to 55 minutes. If a toothpick comes out clean the bread is done
Remove from the oven and let cool for 10 minutes
Remove loaf from pan and allow to cool on a cooling rack
In a small saucepan on low heat, add the powdered sugar to the lemon juice and let it dissolve. Simmer for 3 minutes
Using a toothpick, poke holes all over the loaf, top and sides
Use a pastry brush to brush the lemon syrup on the top and the sides.
Let harden for 15 minutes before serving

Pineapple Rum Fritters
Ingredients:
1 cup all-purpose flour
2 tbsp sugar
1 tsp baking powder
1/4 tsp salt
1/2 cup crushed pineapple, drained (save juice for later)
1 large egg
2 tbsp rum (dark or spiced for more flavor)
1/4 cup milk (or more if batter is too thick)
1/2 tsp vanilla extract
Vegetable oil for frying
For the Topping:
1/4 cup powdered sugar
1/2 tsp ground cinnamon (optional)
Instructions:
Prepare the Batter:
In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, combine the crushed pineapple, egg, rum, milk, and vanilla extract. Whisk until well mixed.
Combine Wet and Dry Ingredients:
Add the wet ingredients to the dry ingredients, stirring until just combined. The batter should be thick but spoonable; add a bit more milk if it seems too thick.
Heat the Oil:
In a large skillet or deep pot, heat about 2 inches of vegetable oil to 350°F (175°C).
Fry the Fritters:
