Today 25th March is Waffle Day.
Here’s a super fabulous recipe for Swedish #frasvåfflor - crispy waffles.
You need a heart shaped waffle maker for these, ideally.
* 100 g butter, melted
* 300 g plain flour
* 2 tsp baking powder
* 1 tsp vanilla sugar/extract
* 250 ml whole milk
* 250 ml water
* Turn on the waffle iron to heat up.
* Mix all the ingredients together to a smooth batter.
* Brush the waffle iron with a little bit of butter then add a ladle full of batter. Leave to cook until golden brown and crispy, remove and serve immediately with whipped cream / ice cream and jam (we love cloudberry jam when eating waffles)
These waffles are best if you make them as you need them, otherwise they lose their lovely crispiness. And don't stack them – simply make and serve straight away.
Do let us know how you get on - we'd love to see pictures of your creations for #waffleday.

🔻 IMPORTANT INFORMATION FOR VICTORIAN TRAVELLERS AND BORDER COMMUNITIES 🔻
- NSW will not be closing its borders (as per NSW Premier Berejiklian’s media statements)
- NSW residents in border communities will have different requirements, recognising the daily interaction of residents with Victoria.
- For NSW residents living along the Victorian border, the five-day stay-at-home requirement will only apply to people who have visited Greater Melbourne after 11.59pm on Friday 12 February. It will not apply to NSW border residents who travel into regional Victoria.
- The border community is defined by the map which was used for the large border ‘bubble’ arrangements at the end of the NSW-Victorian border closure last year. This will be available online soon and we will share when available.
- Under the state-wide Order, anyone arriving in NSW from Victoria after 11.59pm on Friday 12 February 2021 must remain at their home or place of residence for the five-day period announced by the Victorian Government.
- People arriving in NSW from Victoria by air, rail or road (with the exception of people living in the border area) will also be required to complete an online declaration form.

One of our all time favourite #Scandinavian sayings. Hands down. Nothing to worry about? Just say: ‘there’s no cow on the ice’.
The full saying actually goes ‘there’s no cow on the ice as long as the bum is on land’, but everyone knows what you mean if you just mention the first bit. Obviously.

COVID-19 UPDATE - TRAVEL BETWEEN VIC-NSW
The Victorian government has announced that the Bega Valley Shire is now a 'Green Zone' as of 6pm Monday 18 January 2021. This means visitors from Victoria can apply for a permit to re-enter Victoria after visiting the Sapphire Coast, and do not need to have a COVID-19 test, nor isolate.
As already in place, residents from border communities in NSW and VIC are able to travel within the border bubble and do not need to apply for a permit. Residents from border communities need to carry their driver's license with them as proof of address.

COVID-19 UPDATE - TRAVEL BETWEEN VICTORIAN 'BORDER BUBBLE' COMMUNITIES & THE SAPPHIRE COAST
From Bega Valley Shire Council: “People who live in a border community who have not left the border area in the last 14 days can travel to another border community in the ‘border bubble’ without a permit. This means that anyone who is a resident of a Victorian border community is able to travel to a NSW border community to holiday or work, and residents of the Bega Valley and other NSW border communities who wish to travel to a Victorian border community can do so.
You must carry valid photo identification that shows your current address, such as a drivers’ licence, as evidence that you reside in an exempt border community. Once you have reached your intended border community, you cannot travel out of it unless you are returning home.
List of border communities (local government areas) exempt from needing a permit to travel within the border bubble across the two states:
Alpine Valley, Benalla, Bendigo, Buloke, Campaspe, East Gippsland, Gannawarra, Indigo, Loddon, Mildura, Moira, Shepparton, Swan Hill, Towong, Wangaratta, Wodonga, Yarriambiack.
Albury City, Balranald, Bega Valley, Berrigan, Broken Hill, Edward River, Federation, Greater Hume, Hay, Lockhart, Murray River, Murrumbidgee, Snowy Monaro, Snowy Valley, Wagga Wagga, Wentworth.”

Just a reminder that being at the airport early has more than one advantage,. Firstly you can sit down and relax with a coffee and something to eat from our cafe whilst ensuring that you have checked prior to the flight closing.
