Creamy Egg Sando! After my trip to Japan, I've been in love with Egg Sandos. Here's my take on it
Ingredients:
3 Eggs
2 slices Bread
2 tbsp Kewpie Mayo
salt & pepper
parsley (chopped)
Method:
1) Place eggs in a pot and cover with water
2) Bring the boil and leave for 6 minutes
3) After 6 minutes, take the eggs out and run under cold water then Crack and peel the eggs
5) In a bowl, mash the eggs and mayo, salt, pepper and parsley
6) Cut the crusts off the bread and place the eggs between the slices and enjoy!

Easy lemon chicken piccata. This is something I'd pulled together for a quick dinner
Ingredients:
1 skinless boneless chicken thigh
salt & pepper
2 tbsp flour
vegetable oil
1 clove garlic
1/2 lemon slices
1/2 lemon for juicing
1/2 cup chicken stock
2 tsp capers
2 tbsp buter
sage
Method:
1) Dredge chicken in flour, salt and pepper, shake off any excess
2) In a large pan, melt the butter with some vegetable oil over medium heat. Once hot, add the chicken in and cook for 3-4 minutes on each side till browned
3) When chicken is cooked, remove and set aside
4) In the same pan, over low heat, add all your other ingredients in and simmer
5) add your chicken back in and bast it and it's ready!

just pop some eggs in a water bath and set to 63C for 30minutes and you're done! it's as simple as that

Beef Tartlets is the easiest thing as long as you have leftovers!
Ingredients:
Leftover Beef Ragu or anything else of your choice really
Frozen Puff Pastry
Method:
1) Cut Frozen Puff Pastry sheets in circle
2) Place your leftovers in the middle and score a line (not all the way through) around the leftovers
3) Bake in the over at 180C for 10 mins and enjoy!

Miso Crab. This is an amazingly savoury dish and if you can get past the peeling of the crab meat, is not too difficult!
Ingredients:
Crab meat (cleaned and peeled) - you can cheat with canned crab meat
2 tbsp miso
1 tbsp soy sauce
1 tbsp sake
1 tsp honey
Method:
1) Clean and peel the crab meat out of their shell
2) In a bowl, mix together the crab meat, miso , soy sauce and sake
3) Place it back in the shell and bake at 200C for 10 minutes

These great Pulled Beef Sliders with Green Sauce. Oh so unctuous and beautifully savoury.
Ingredients
1kg Beef Chuck (Cut into big chunks)
1 Large Brown Onion
Olive Oil
1L Beef Stock
250ml Red Wine
Salt & Pepper
Herbs of choice (I used basil and oregano)
Method:
1) In a pot, brown the beef over high heat
2) Once browned, add in Onion to fry
3) Add in red wine, beef stock, salt & pepper
4) Bring to a simmer and simmer on low for 3 hours
5) Once done, shred the beef

Seafood fried rice! Some carbs, some protein, some vegies and oh so much deliciousness
Ingredients:
100g of prawns or crab meat (cooked and deshelled)
1 bowl of cooked rice (brown or white)
1 egg
1 clove of garlic
some chopped spring onion
peas or any veg of choice
Method:
1) Heat a pan on medium-high heat and brush with some oil
2) Once hot, throw in your garlic and stir fry till fragrant
3) Toss in your rice and stir till rice grains are separated
4) Toss in your seafood and veggies
5) Create a well in the middle of your pan and crack in your egg and stir through till incorporated and cooked all the way through
6) Sprinkle on your spring onion and serve up!

Baked cheese can be in a healthy diet too! As long as it's in moderation and shared with others unless it's cheat day then go ahead and devour that baby
Just get a wheel of soft cheese (think camembert, brie), top it with your flavourings of choice (we used a beautiful fresh herby pesto) and bake it at 180C for 12 minutes

Creamy Egg sando. Extra protein hit!
Ingredients:
3 eggs
2 tbsp of light mayo
2 slices of your favourite bread (I find white is best for this)
salt & pepper
2 tsp milk
Method:
1) Put eggs in a pot and cover with water till submerged and bring to a boil, once boiling, cook for 7 minutes
2) After 7 minutes, take the eggs out and place them in an iced bath to stop cooking
3) Peel the eggs and mash them in a bowl and mix through the mayo, salt & pepper and milk
4) Butter the bread and place your egg mixture and it's ready!
