Golden, crisp, creamy, salty, fresh.
A Caesar salad — reimagined.

This Warm Chicken Caesar Salad with Parmesan Crisp Ring takes a classic favourite and elevates it into a refined entrée worthy of a modern dégustation menu. Featuring crisp baby cos, smoked pancetta, anchovy Caesar dressing, shaved parmesan, crunchy croutons, and a golden parmesan crumb ring that becomes the hero of the plate.

Parmesan Crisp Ring

Ingredients

• 120g finely grated parmesan
• 40g panko breadcrumbs
• 20g unsalted butter, melted
• 1 tsp olive oil
• Pinch cracked black pepper

Method

1. Combine parmesan, panko, melted butter, olive oil, and pepper.
2. Place a silicone ring mould or metal cutter on baking paper.
3. Press mixture evenly into a ring shape about 1cm thick.
4. Bake at 180°C for 8–10 minutes until golden.
5. Allow to cool slightly, then gently remove from mould.
6. Pan-fry lightly before serving for extra crispness.



Caesar Dressing

Ingredients

• 2 egg yolks
• 1 garlic clove, finely grated
• 3 anchovy fillets
• 1 tsp Dijon mustard
• 1 tbsp lemon juice
• 1 tsp Worcestershire sauce
• 120ml grapeseed oil
• 30ml olive oil
• 40g finely grated parmesan
• Salt and pepper to taste

Method

1. Blend yolks, garlic, anchovy, mustard, lemon, and Worcestershire.
2. Slowly emulsify with oils.
3. Fold through parmesan.
4. Season to taste.



Plating

Place the warm parmesan ring slightly off-centre and arrange the dressed salad delicately across the ring. Finish with pancetta shards, shaved parmesan, anchovy pieces, and fresh herbs for height and texture.

When pressure hit, the team stood taller.

Originally designed by Liam for the Global Young Chefs Challenge, this dish was ultimately executed by Courtney Short — stepping in on the world stage under extraordinary circumstances.

Stirling halibut, Norwegian king prawn, braised Welsh leeks, native lemon myrtle and ruby finger lime beurre came together in a dish that represented far more than technical skill. It represented teamwork, resilience and the spirit of Australian chefs.

Moments like this define competitions.
Not just the food — but the people behind it.

Proud of both Liam and Courtney for showing what Team WA and Australia are all about.

A huge congratulations to Australia’s Leslie Chan on competing in the Global Chefs Challenge and finishing 10th in the world. 👏🇦🇺🌏

To stand on the world stage and compete against some of the best chefs internationally is an incredible achievement. The commitment, preparation and passion required to reach that level deserves enormous respect.

As fellow Australian chefs, we are proud to support and celebrate those representing our industry internationally and continuing to raise the standard of Australian cuisine around the globe.
