KITCHARI - the Ayurvedic detoxification food. No green smoothies here! KITCHARI is the core of Ayurvedic nutritional healing. It is a simple stew of basmati rice and split mung dhal that has the qualities of being both sweet and cooling thereby nourishing the bodily tissues. It is the primary food in a detoxification or cleansing program because of its ease of digestion and assimilation. As the first hints of spring are now upon us it is the perfect time to try out a detoxification program to shed the accumulation of kapha.

Kola Kanda - an Ayurvedic medicinal porridge made with rice, coconut milk and the juice of medicinal greens. The porridge is said to cool the body, promote energy and help balance the three forces of vata, pitta and Kapha. Today I used Mukunuwenna which is highly valued for strengthening the eyes, for eye ailments and calming the nervous system. Other green herbs can be used such as gotu-kola and brahmi. Serve with some jaggary on the side.

Delicious golden ghee. Good for all doshas, but especially for Vata and Pitta as it is sweet and unctuous. It is one of the most ancient and Sattvic foods known. Enjoy on a daily basis. , , ,
