Last week we had a visit from students at Mildura Senior College. They came to spend their hard earned money from an entrepreneurial project in which they supply us a key ingredient in our panini. The school grow for the brassica leaves and shoots we use to make frijiarelli which features in our Vegetariano and Gallina panini. We had the opportunity to talk about the importance of our values pertaining to provenance and how grateful we are for students helping us to achieve unique products such as this.

Ravioli di coniglio e qu***ia. We love how this dish represents the Mallee so perfectly. The rabbit, quail, wheat flour, eggs, mushrooms, carrots, garlic, olive oil and salt encompass our greater region beautifully. Grana and prosciutto ends are used with mirepoix and garlic to develop the flavour in the base of the filling before the meats are added and cooked until they fall off the bone. This rabbit and quail ravioli dish can be sampled as one of the courses at this weekend’s Banchetto. A few tables remain so call to reserve your seat now. 50029080

Seasonal change for panino #13. Perfect for a 23c Autumn day in Mildura on your Panino Friday…introducing Pollo e funghi. This new panino has our beautiful succulent grilled chicken breast with our house pesto, aioli, fresh rocket, and mushrooms, which have been blistered in a hot oven with local garlic, salt and olive oil.

What a blast! Last night’s banchetto for the Mildura Ladies Wine and Food was a great success. Thanks to winemaker at Chalmers for creating these beautiful wines, uniquely for The Italian and for joining us in showcasing our regions best wine and food in our relaxed homely setting. Pictured is Arancini alla Norma, a Sicilian recipe with a filling of eggplant, tomato, basil and salted ricotta. Named in honour of Vincenzo Bellini’s opera Norma.
