King Fish ❤️

A top choice for many cooks for its sweet meaty texture, great raw for a crudo entree or seared on the skin side until the flesh is medium, and great with asian flavours too.

Some of my favourite ways over the years

- x.o sauce, chicken broth, okra
- pear dashi, seasonal vegetables
- cucumber, parsley oil, sweet lime puree

Working unsupervised on Wednesday as usual, slinging out the last crepe for the evening after an eventful day 🤣.

The banana crepe is still a killer one to try.
