If you’re firing up the grill, there are some important things to remember. To achieve the best results when cooking over coals, it’s essential to have total control over the temperature. To hit and maintain the required heat for cooking on a charcoal BBQ, there are three rules we live by: ⁠

1. It’s all about the balance of fuel and oxygen⁠
2. Use a charcoal chimney ⁠
3. Make sure to use those dampers⁠

Our seasoned belly porchetta has long been in our core range at Meatsmith, and is one of the most popular items we prepare. ⁠

While it can be cooked entirely in the oven, we recommend starting it low and slow indoors, then finishing over coals for the best result.⁠

Roast at 130–140°C for 2–2.5 hours. As it cooks, bring your coals to a white-hot heat. Transfer the porchetta to the rotisserie and cook over the coals for 15–20 minutes, until the crackling is crisp and deeply golden.⁠

Together with our friends from SHADES, we’ve put together three of our favourite ways to use up leftover Christmas ham:⁠
An epic Christmas sandwich, a ham and Comté Pithivier, and a Tartiflette, a comforting dish made with ham lardons, potatoes and cheese.

Confit Turkey Legs; Slow-Cooked Lamb and Pork Shoulders; Standing Rib Roasts; and Whole Porchetta, ready for roasting.⁠

To sit alongside, we have the comforts covered: Cauliflower Cheese, Braised Fennel with Tomato and Olives, and Potato Gratin.⁠

And to finish: Meatsmith Christmas Pudding, served with our house-made Brandy Custard.⁠

We also stock a range of wine, beers and and other beverages, to round out Christmas lunch.⁠
