Creamy Lobster & Scallop Chowder
Ingredients:
2 tbsp butter
1 tbsp olive oil
1 onion, finely chopped
2 celery stalks, diced
2 carrots, diced
3 cloves garlic, minced
2 medium potatoes, peeled and cubed
4 cups seafood or chicken stock
1 cup heavy cream
1/2 cup whole milk
1/2 cup dry white wine (optional)
1 tsp Old Bay seasoning
1/2 tsp thyme
1/2 tsp paprika
Salt and black pepper, to taste
250g Sea Scallops, Roe On or Off
250g Lobster meat, chopped
2 tbsp fresh parsley, chopped
Crusty bread, for serving
Instructions:
Melt butter with olive oil in a large pot over medium heat
Add onion, celery, and carrots, sautΓ© 5 minutes until softened
Stir in garlic and cook 1 minute more
Add potatoes, stock, wine (if using), Old Bay, thyme, paprika, salt, and pepper
Bring to a boil, then reduce to simmer 15β20 minutes until potatoes are tender
Stir in cream and milk, simmer gently 5 minutes
Add Scallops and Lobster, cooking 4-5 minutes until Scallops & Lobster are opaque and tender
Adjust seasoning, garnish with parsley, and serve hot with crusty bread

Nova Scotia Seafood Chowderπ¦π€€π¦
Ingredients:
For the Chowder:
2 tablespoons butter
1 small onion, finely chopped
1 stalk celery, finely chopped
1 large carrot, diced
2 cloves garlic, minced
3 cups seafood or fish stock
2 large russet potatoes, peeled and diced
1 cup heavy cream
1 cup whole milk
1/2 teaspoon salt (adjust to taste)
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 bay leaf
1/2 pound fresh white fish (haddock, cod, or halibut), cut into chunks
250g of prawns, peeled and deveined
250g of scallops
1/2 cup cooked lobster meat (optional)
1/2 cup cooked mussels or clams (optional)
2 tablespoons fresh parsley, chopped (for garnish)
Directions:
SautΓ© the Vegetables:
In a large pot over medium heat, melt the butter. Add the onion, celery, carrot, and garlic. Cook until softened, about 5 minutes.
Simmer the Broth:
Pour in the seafood stock and add the diced potatoes, salt, pepper, thyme, and bay leaf. Bring to a simmer and cook until the potatoes are tender, about 15 minutes.
Add the Seafood:
Reduce the heat to low and gently add the white fish, prawns, scallops, and Lobster (if using). Simmer for about 5β7 minutes until the seafood is cooked through.
Finish with Cream & Milk:
Stir in the heavy cream and milk, letting the chowder warm through without boiling.
Serve & Enjoy:
Remove the bay leaf, ladle the chowder into bowls, and garnish with fresh parsley. Serve with warm, crusty bread or biscuits for a truly comforting meal!

A group of five people have been busted at Thompson Beach with 240 Blue Swimmer crabsπ¦, 221 of them under the legal size limit.
