At the Ruttab stage, the hard skin begins to soften at the tip and turn brown, moving up the fruit as it continues to ripen. As the fruit softens, the date becomes juicier and sweeter.

Our brand name comes from Ruttab, the Arabic word for fresh dates. Ruttab is the third stage of the four stages of date ripening.
