INGREDIENTS
1.5kg chicken portions
500g potatoes peeled and cut into 5cm pieces
2 onions roughly chopped
150g fresh spinach (optional)
1 lemon halved
⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the tikka Paste:-
2 tbsp olive oil
1 tsp ground cumin
1 tsp ground coriander
1 tsp sweet smoked paprika
2 tsp Garam Masala
2 tbsp tomato purée
10cm ginger peeled and roughly chopped
4 garlic cloves peeled
1 fresh red chilli
2 jarred red peppers
1/2 tsp Maldon Salt
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Line a large roasting tin with parchment paper. It’ll make washing up so much easier!
Blitz the paste ingredients together in a blender. Tip into a bowl (or direct into the roasting tray) and add the chicken making sure it’s completely coated.

Add the onions, potatoes and chicken to the tray.
Roast for 45 minutes at 200 degrees.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Squeeze in the lemon, wilt in the spinach if using and finish with fresh coriander.
