Ok this is going to be super controversial because the consensus is that green tea should be consumed as fresh as possible but I’ve conducted an unintentional experiment multiple times over the years and can safely conclude that if there’s a high-quality, first harvest matcha you don’t love because it’s too bitter for your liking, age it in the freezer for a couple of years.

Over time, as the freshness and polyphenols go down, the sweetness starts to shine more. I hated this particular one when I first tried it but it was expensive so I decided to age it and now it tastes so smooth and smells like manuka honey!

Long story short: no Ichibancha matcha goes to waste in this house!
