Our main activity consists of the manufacturing and distribution of firelighters, charcoal and briquettes. Besides our own Safari brand, we also manufacture under licence for various national and local companies such as Lion Match Products (PTY) LTD. We are easily adaptable to change our production lines and can produce what the customer requires.

Nothing beats a thick, juicy steak chargrilled to perfection on the Braai dressed in a creamy peppercorn sauce. This is perfect weekend grub, delicious, mouthwatering

Fillet Steak:

800 g fillet steak
Freshly ground salt and pepper
Creamy Peppercorn Sauce:
200 ml cream
150 ml double cream yoghurt
1 tbsp ground black pepper
50 g green peppercorns
1 tsp biltong spice
1/2 tsp smoked paprika
1/2 tsp freshly ground salt

Braaied Rump Steak:

1. Prepare a fire with wood, briquettes or charcoal making sure you have enough very hot coals to braai your steak. Season your fillet steak with salt and pepper on both sides and place it on the grid of the braai.

2. The general rule for a 2.5 cm thick steak, is that if you like it done rare, then you would need to cook it for 1-2 minutes each side, letting it rest for 6-8 minutes. For a medium rare steak, cook it for 2-2.5 minutes each side, letting it rest for 4 minutes and for a well-done steak, cook it for 4.5 minutes each side, letting it rest for 1 minute. If your steak is thicker it will need more cooking time and if it is thinner, it will need less cooking time.

Serve immediately with the creamy peppercorn sauce.

Creamy Peppercorn Sauce:

1. Gently heat the cream and yoghurt in a saucepan. Bring to a simmer, then stir in the black pepper, green peppercorns, biltong spice and smoked paprika. Allow to cook and reduce for 3-5 minutes. Season with freshly ground salt, stir, then remove the saucepan from the heat and serve immediately with the chargrilled rump steak.

1.5kg chicken wings (separated into wingettes and drummettes, tips discarded)
For the marinade:
1/4 cup light soy sauce
1/3 cup dark soy sauce
3 Tbsp vinegar
1/2 cup olive oil (or vegetable oil)
2 tsp each of granulated onions and dried oregano
1 tsp each of kosher salt, granulated garlic, dried parsley, and black pepper
1/4 tsp each of dried thyme and dried basil
1/2 tsp cayenne pepper or more for a stronger kick

Combine all ingredients for the marinade in a large Ziploc bag. Close the bag and shake really well.
Add the chicken wings, close the bag and massage the wings really well to ensure good coverage. Expel as much air as you can, close bag and refrigerate for at least 2 hours, preferably overnight and up to 24 hours.
Remove the chicken wings from the marinade and pat dry with a paper towel.
Brush the braai grate with cooking oil to prevent sticking. I give it a quick wipe with a piece of paper towel soaked in vegetable oil. The braai is hot so be very careful and wear a heat resistant glove.
Cook the chicken wings on the braai, lid closed, for about 10-15 minutes on each side, until the meat is nicely browned and the juices run clear. You may want to use an instant read thermometer if not sure. The wings are ready when the temperature in the thickest parts registers at least 70C.

• 125ml basil
• pinch garlic powder
• 125ml olive or avocado oil + extra
• 30ml lemon juice
• 3ml castor sugar
• 2 x 400g packets puff pastry, defrosted
• 250ml Cheddar, grated
• 250ml mozzarella, grated
• 2 tomatoes, sliced
• 60ml peppadews (optional)
• 1 small red onion, thinly sliced
• 125ml chutney

1. For the basil oil, blanch the basil in boiling water for 10 seconds. Refresh in cold water. Drain and blitz with the remaining ingredients. Season. Store in an airtight container in the fridge for up to a week.
2. For the pie, roll out one of the pastries and top with the cheeses, leaving a 2cm border. Top with the tomatoes, peppadews (if using) and onion. Spread the chutney on the second pastry and place (chutney side down) on the filling. Press the pastry sides together with a fork to close.
3. Brush both sides with extra oil. Place on a braai grid and close gently without latching. Cook over medium-hot coals for about 20 minutes, turning regularly, until golden brown and cooked. Serve with the dressing.

Sustainable Braai Feature.

If 2020 has taught us anything it's that our planet (and people) need room to breathe. We cannot carry on like we used to and that, also, includes the way we braai - where we source our products from - the human resource practices from suppliers and so forth.

It's not a "tomorrow" issue - it's right now and, over the coming weeks, we will look into some companies waving the sustainability flag.

Peri-peri chicken on the braai

Serves 4

1 whole chicken, butterflied
1 cup Lookout white wine
½ cup sunflower oil
½ cup freshly squeezed lemon juice
8 gloves garlic grated
1 tsp peri-peri powder
1 tsp dried chili flakes
1 tbsp paprika
½ tsp Salt

Butterfly the chicken by removing the spinal cord.
Remove the tips of the wings to prevent them from burning.

Place the removed bones, giblets and wing tips in a small sauce pan with onion, garlic clove, bay leaf and pepper corns, cover with water and bring to the boil. Then reduce to a simmer, creating a fragrant stock. Eventually add 4 tbsp of the marinade to create your sauce.

For the marinade: Mix the white wine, oil, lemon juice, garlic, spices and salt together. Pour the marinade over the chicken and leave in the refrigerator to marinate for 24 hours.

Remove from the marinade put on the roster and braai for 40 minutes over moderate coals. Baste with the marinade on every turn.

Remove from the fire and season with salt
The chicken is best served with rice cooked in a tomato and onion mix with bay leaves and chicken stock.

• 500 g Self-raising flour
• 250 g Cheddar cheese, grated
• 1 cup Frozen corn
• 500 ml Maas or buttermilk
• 1 Large onion, chopped
• 1 KNORR Cheese and Bacon flavour Potato Bake

1. In a bowl mix together all the ingredients, reserving a little grated cheese.
2. Spoon the dough into one large greased loaf tin or two smaller greased loaf tins, top with reserved cheese.
3. Bake for about one hour at 180°C or until golden and cooked through.
4. Delicious served as an accompaniment to braaied meat.

Chakalaka Soup with Little Boerewors Balls

Chakalaka is a highly spiced African vegetable relish usually eaten cold as an accompaniment to braaied meat, but here transformed into a chunky soup brimming with punchy flavours. Topped with juicy mini-meatballs made from boerewors filling, this is a dish that will bring tears to the eyes of chakalaka devotees (especially if you increase the quantity of fresh chillies in the recipe). 😋🔥

Serves 8 people.

3 Tbsp (45 ml) sunflower oil
4 carrots, peeled
3 small green peppers, finely sliced lengthways
4 onions, peeled and finely chopped
1 stick celery, finely chopped
1 green or red chilli, deseeded and finely chopped (or more, to taste)
4 cloves garlic, peeled and crushed
2 Tbsp (30 ml) grated fresh ginger
6 large, ripe tomatoes
4 cups (1 litre) tomato juice (the sort you’d use for a tomato cocktail)
3 cups (750 ml) water or vegetable stock
2 tins baked beans in tomato sauce
2 tsp (10 ml) medium-strength curry powder
1½ tsp (7.5 ml) cumin
salt and milled black pepper
½ cup (125 ml) finely chopped fresh parsley or coriander

For the boerewors balls

500 g slim boerewors, or similar sausage
½ cup (125 ml) channa [chickpea] flour
1 tsp (5 ml) paprika
½ tsp (2.5 ml) turmeric

Heat the oil in a large pot. Dice two of the carrots and set the others aside. Fry the diced carrots, pepper slices, onions, celery, chilli, ginger and garlic over a medium-high heat for 8-10 minutes, or until softened but not brown. Roughly chop the tomatoes, place in a blender and pulse to form a rough purée. Pour the purée, the tomato juice and the stock into the pot and cook at a brisk bubble for 30 minutes, skimming off any foam as it rises. Stir in the baked beans, curry powder and cumin, season to taste with salt and pepper and simmer for 20-30 minutes.

For the meatballs, squeeze the boerewors filling from its casing and roll into balls the size of a marble. Combine the channa flour, paprika and turmeric on a plate and lightly roll the balls in the mixture. Fry in hot oil over a medium heat for 4 minutes, or until cooked through. Drain on kitchen paper. Coarsely grate the remaining two carrots. Serve the soup piping hot, topped with hot frikkadels, grated carrot and a shower of parsley.

Calamari with Asian dressing 😋🔥

400 g calamari

For the dressing, mix:
2 T olive oil
2 T soya sauce
1 t crushed garlic
1 t crushed chilli
1 t crushed ginger
salt, to taste

Thread the calamari onto skewers. Sear on the braai on both sides, making sure not to overcook it. Serve with the dressing.
