Fresh summer organic strawberry no bake pie

3 pounds ripe, fresh organic strawberries rinsed, dried, and hulled, 3/4 cup coconut sugar, 2 tablespoons organic non-gmo corn starch, 1 1/2 tsp Sure-Jell or cornstarch, Pinch himalayan salt, 1 tablespoon fresh organic lemon juice, 1 prebaked organic pie shell,

Whipped Cream: 1 cup very cold organic heavy cream, 1 tablespoon coconut sugar

Add six ounces of berries to a food processor. Process until smooth, about 30-40 seconds, scraping down sides of food processor bowl as needed. In a medium saucepan, whisk together coconut sugar, Sure-Jell, cornstarch, and salt. Add pureed strawberries and cook over medium-high heat, stirring constantly. Bring to a boil, and boil for two minutes, scraping down the sides and bottom of saucepan constantly to prevent the mixture from scorching. Transfer mixture to a large bowl, add lemon juice, and allow to cool to room temperature. Add remaining whole berries to the puree mixture, and lightly fold to coat all the berries with puree mixture. Mound the mixture into pre-baked pie shell, rearranging berries as necessary to fill holes and make the overall appearance more attractive. Refrigerate at least two hours until well-chilled.
For the whipped cream, add cream and coconut sugar to a chilled mixing bowl. With chilled beaters, begin beating the cream and sugar on low speed until bubbles form (about 30 seconds). Turn the speed up to medium, and continue to beat until the beaters begin to leave a trail in the cream mixture: approximately 30-45 seconds more. Turn speed up to high, and continue to beat until cream has doubled in volume and soft peaks have formed-approximately 30-60 seconds longer. Cut pie into wedges and serve with whipped cream.

Red velvet cupcakes with sugar-free cream cheese frosting


Red Velvet Cupcake: 1 1/4 cups whole wheat pastry flour (or all-purpose flour), 1/4 cup coconut sugar, 2 Tablespoons natural cocoa powder (not dutch processed), 1 Teaspoon Baking Powder, 1/4 Teaspoon Salt, 1 cup steamed (but cooled) beets (about 2-3 large beets), pureéd until smooth, ½ cup agave syrup, 1/3 cup coconut oil, melted at room temperature, 2 T lemon juice, 1 tsp vanilla extract, 1 tsp chocolate extract

Sugar-Free Vanilla Cream Cheese Frosting: 2/3 cup vegan cream cheese (non-hydrogenated), 1 T agave syrup, 1 tsp lemon juice, 1 tsp vanilla extract, 1-2 stevia packets (about ½ – 1 tsp powdered stevia)


Red Velvet Cupcake: Preheat your oven to 350 degrees and line a 12-muffin tin with liners. In a large bowl, whisk together the dry ingredients. Set aside. In the bowl of a food processor, process the beet pureé, agave syrup, coconut oil, lemon juice, and vanilla and chocolate extracts. Process until completely smooth. Add the wet mixture to the dry ingredients and mix until just combined. Equally distribute the batter between your prepared tins, and bake for 18 – 22 minutes, until a toothpick inserted into the center comes out clean. Let cool completely before applying the cream cheese frosting. If you want to have the crumbles on top of your frosting, reserve one cupcake and do not apply frosting to it. Instead, crumble it up into a bowl, and once you are done frosting the other cupcakes, sprinkle the crumbs on top. Enjoy!

Coconut Ice Recipe

2 cups pure icing sugar
1/4 tsp cream of tartar
395 g sweetened condensed milk
3 1/2 cups desiccated coconut
6 drops pink liquid food colouring


STEP 1 Grease and line a 20 X 30cm rectangular slice tray with baking paper (allowing the edges to overhang).

STEP 2 Sift the cream of tartar and sugar into a bowl.

STEP 3 Add the condensed milk and coconut and stir until well combined.
STEP 4 Divide the mixture equally into two bowls.

STEP 5 Add the food colouring to one bowl and stir well to combine.

STEP 6 Place the white mixture into the base of the pan and use a spoon to firmly press down and level out.

STEP 7 Carefully spread the pink mixture over the top and press down firmly.

STEP 8 Refrigerate for at least 1 hour to allow to fully set before cutting.

Coconut oil poundcake with almond & lime zest


½ cup sliced almonds, 1 cup, plus 2 tablespoons sugar, ½ cup virgin coconut oil, ¾ cup milk, 3 large eggs, Zest of 1 lime, 1 ¾ cups all-purpose flour, 1 ¾ teaspoons baking powder, ¼ teaspoon grated nutmeg, ¼ teaspoon salt


Heat the oven to 350 degrees and grease a 9-by-5-inch loaf pan. To make the topping, stir together the almonds, 2 tablespoons sugar and 1 tablespoon water in a small bowl. Melt the coconut oil in a small pan. Pour it into a large bowl and whisk in the remaining sugar, milk, eggs and lime zest. In a medium bowl, whisk together the flour, baking powder, nutmeg and salt. Fold the dry ingredients into the wet ingredients to combine. Pour the mixture into the loaf pan and smooth with a spatula. Sprinkle the almonds on top. Bake until golden brown and a toothpick inserted in the center comes out clean, about 60 minutes. Allow to cool on a wire rack for 10 minutes before removing from the loaf pan. Cool completely before serving.

Flourless chocolate coconut butter cake


1 pound soy free chocolate chips,

1/2 cup coconut butter, room temperature,

1/2 cup coconut oil, room temperature, 8 eggs, Shredded coconut (optional)


Pre heat oven to 325 degrees. Lightly coat an 8-inch spring form pan with coconut oil. Melt chocolate in a medium saucepan over low heat. Mix coconut butter and coconut oil into chocolate and continue to heat the ingredients until the coconut butter is completely melted. Take chocolate coconut mixture off the heat and set it aside. Whip eggs with an electric mixer until doubled in volume. This will take 8-10 minutes. Carefully pour chocolate mixture into whipped eggs. Fold the ingredients together until they’re combined. Pour cake batter into greased spring form pan. Bake for 25-30 minutes. Let cool for 30 minutes. Sprinkle cake with shredded coconut before serving.
