Spicy Tomato Raita being made - sometimes you hate to stir it all in. Shannon had just added the tarka of chili colored oil with fried tomatoes, cumin, and curry leaf to the yogurt base when I captured this image of swirling colors.
What gives our Eggplant Bharta that delicious smoky flavor? It's smoke!
Actually we blacken the hell out of the eggplants, then carefully pick away the charred skin to make this classic north Indian dish. Then the smoky, soft inside is mashed and fried in mustard oil with lots of onions and tomatoes, ginger and garlic. You have to taste it to believe it.
It's official, we've begun serving our July menu: North Indian Summer Thali, featuring some of our favorite foods - dhaba-style Butter Dal, Roasted Street Corn with chili and lime, Watermelon Curry (you read that right), with some lovely sides, topped off with mango kulfi frozen desert. We've got another surprise or two up our sleeves, so stay tuned (photos will be coming soon).
We're ending our popular June Thali, but 'phasing in' the new menu one dish at a time. A phenomenon we like to call... FRANKENTHALI!!
