Spinach Cantaloupe Salad with Mint
• 4 cups fresh spinach leaves
• 1 cup sliced cantaloupe
• 1 cup sliced avocado
• 1/2 cup diced red bell pepper
• 2 tablespoons chopped fresh mint leaves
• 1 tablespoon mint apple jelly
• 1 1/2 teaspoons white wine vinegar
• 3 tablespoons vegetable oil
• 1 clove garlic, minced
1. Divide spinach between 2 serving plates. Arrange half of the cantaloupe and half of the avocado in a circular pattern over the spinach on each plate. Sprinkle with diced red pepper and fresh mint.
2. Mix together the mint jelly, white wine vinegar, oil and garlic. Drizzle over the salads. Serve.

We've been seeing a lot of Spring colds here at Qliance. If you're feeling under the weather (or if you just want something tasty!) then this week's ROTW is for you! Check out Dr. Gaynor's famous chicken soup recipe, made with lots of fresh veggies and flavorful spices!
Dr. Gaynor’s Famous Chicken Soup
4 quarts water
1 whole or cut-up chicken
6 cloves of garlic, peeled
4 onions, pealed
4 celery stalks, washed and cleaned
4 carrots (large)
2 tsp dill weed or a bunch of fresh dill
Kosher salt and pepper to taste
Boil above ingredients for about 2 hours. Remove chicken and cool before removing the meat from the bones and returning some to the soup. The rest of the meat may be used for sandwiches, chicken salad, etc.
Veggies may be used whole or chopped, as you prefer. If whole, strain in colander for broth, and add back in chicken chunks.
