Happy Labor Day! This simple Lemon Couscous from our 25th Anniversary Cookbook makes a great side-dish for your end of summer BBQ.
Pour 1 c. boiling water over 1 c. couscous. Add juice from 1 lemon and cover. Let sit for 10 minutes, then add 1/4 c. olive oil and 2 preserved lemons, diced. Season with salt and pepper.
