We have a very simple snack recipe for you that is perfect for National Garlic Day! Garlic Basil Parmesan Crisps:
Parmesan cheese, shredded
Basil, finely chopped
Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper. Place tablespoons of the Parmesan cheese on the baking sheet, spreading each heap out into a thinner circle. Sprinkle with garlic powder and basil.
Bake in the oven for 5 minutes or until the outside edges become golden brown. Enjoy them crispy!

Make lunch a little more interesting today with this delicious Cranberry Pecan Chicken Salad recipe! #NationalPecanMonth
3 cups cooked, shredded chicken
3/4 cup mayonnaise
3/4 cup chopped celery
3/4 cup chopped pecans
1/2 cup dried, sweetened cranberries
1/8 teaspoon salt
1/8 teaspoon white pepper
Combine all ingredients together and mix well. Refrigerate for an hour to allow flavors to combine. Serve chilled. Enjoy!

April is National Pecan Month! Whip up this tasty Pecan Brussel Sprout Salad as a side for dinner tonight!
1 tablespoon olive oil
1 tablespoon butter
1 pound brussel sprouts
1/2 cup raisins
1/2 cup pecans
2 tablespoons olive oil
1/2 teaspoon apple cider vinegar
1/2 teaspoon dijon mustard
Salt and pepper, to taste
In a skillet, lightly grill brussel sprouts in olive oil on medium heat (3-4 minutes on each side).
In the meantime, make the dressing by mixing all ingredients well in a bowl.
While brussel sprouts are grilling, lightly toast pecans in butter in a small skillet.
When brussel sprouts are grilled, place on cutting board and chop into three pieces, rather than in half.
Mix chopped brussel sprouts, raisins, pecans and top with dressing.

1 1/2 cups almond flour
1/4 cup flaxseed meal
2 tablespoons coconut flour
1 1/2 teaspoons baking soda
1/4 teaspoon sea salt
5 large eggs
1/4 cup coconut oil
1 tablespoon pure maple syrup
1 tablespoon apple cider vinegar
2 tablespoons sunflower or pumpkin seeds (optional)
Preheat oven to 350 degrees F, rack in the middle. In a large bowl, whisk almond flour, flaxseed meal, coconut flour, baking soda and sea salt until all clumps are broken down. Stir in eggs, coconut oil, maple, and vinegar and continue whisking until mixture is just combined.
Pour into a silicone loaf pan, making sure batter is evenly distributed, then top with desired seeds. Bake for 40 minutes. Cool to room temperature, slice and serve.
Yield: 1 loaf, 12 slices

St. Patrick’s Day is tomorrow! If you are a fan of Corned Beef and Cabbage this recipe is for you! Let your slow cooker do all the work for you this year.
3-4 pounds corned beef brisket
3-4 cloves of garlic
pepper to taste
1 large head of cabbage
2 garlic cloves
spices to taste
Put corned beef in the crock pot for 8 hours on low heat with garlic, pepper and enough water to just cover the meat. About 30 minutes before the beef is done, slice carrots, onion, garlic and cabbage. Saute onions, garlic and carrots in butter in a large skillet until somewhat soft. Add cabbage and spices and cook until soft. Add a little corned beef water from the crockpot if it starts to get dry. Serve the corned beef over the cabbage.

1/4 cup dark chocolate chips
1 teaspoon coconut oil
1/4 cup almond butter
2 tablespoons raisins
1 tablespoon unsweetened shredded coconut
Slice apples thin, about 1/4 inch thick. Arrange apple slices on a plate in a single layer.
In a small saucepan, melt chocolate chips and coconut oil for 20 second intervals on low heat, stirring in between, until almost completely melted. Stir any unmelted pieces until they melt (this prevents the chocolate from burning).
Drizzle melted chocolate and almond butter over the apple slices and sprinkle with raisins and shredded coconut.

This Citrus Marinated Flank Steak is sure to be a crowd pleaser for dinner tonight! #NationalNutritionMonth
The juice of 1 orange
The juice of 2 limes
1/4 cup extra virgin olive oil
2 garlic cloves, roughly chopped
1 tablespoon chipotle chili powder
3 tablespoons chopped cilantro
1 teaspoon ground cumin
1 teaspoon salt
2 pound flank steak
With a small, sharp pairing knife score the steak on both sides.
Combine the orange juice, lime juice, olive oil, garlic, chili powder, cumin and salt in the bowl of a food processor or blender; puree until smooth. Place the steak in a large, resealable plastic bag and pour the marinade over it. Press out the air, seal the bag and marinate at room temperature for at least 2 hours.
Prepare the coals on the grill until they are glowing red with a white ash around them. Drain and discard the marinade and place the steak 4 inches over the coals; sear quickly, about 3-4 minutes on each side.
Move the steak away from the direct heat, cover the grill and continue to cook until the internal temperature reaches 135 degrees F, about 7-10 minutes longer. Remove the steak from the grill and allow to rest for 10 minutes before slicing and serving.

Have you been searching for the perfect winter soup? This is it! Sausage, Sweet Potato and Kale Soup:
1 pound sweet Italian sausage, casings removed
1 tablespoon olive oil
1 large yellow onion, chopped
1 teaspoon salt
1/2 teaspoon pepper
4 garlic cloves, minced
2 large sweet potatoes, peeled and chopped into 1/2 inch cubes, about 3 cups
4 cups chicken stock
1 bay leaf
1 bunch kale, stems removed and chopped
Heat a large pot over medium high heat. Cook the sausage in the olive oil, breaking it up with the back of a wooden spoon until almost cooked through, about 5 minutes. Add in the onion, salt and pepper, and cook until translucent, another 5 minutes, stirring occasionally. Add in the garlic and cook until fragrant, 30 seconds. Add in the sweet potatoes, chicken stock and bay leaf. Cook partially covered over medium heat until the sweet potatoes are tender, 20 minutes.
Remove the bay leaf and add in the kale. Continue to cook over medium heat for 5 minutes until the kale is tender. Turn off heat, taste for salt and pepper, add more if necessary. Serve warm!
