Doing a little meal prep on this beautiful Sunday, wondering if one of my favorite (healthy) snack foods is weird or common?! 🤷♀️ You tell me. I LOVE blistered green beans. Cold, hot, room temp, doesn’t matter. I start with plenty of ghee, medium/high heat, toss in the green beans and sprinkle liberally with some sea salt. Once they look like this, they’re done! I’m TRYING to let them cool and then I’ll eat them on the side of some homemade chicken salad that I made from a leftover smoked chicken we had Thursday night. That covers lunch for me Monday and Tuesday. What are you having for lunch this week and do you have a weird favorite food you like to snack on?

Is anyone else happy the holiday week is over?!? I am. I love being back into my routine and backing away from the ice cream and other indulgences that snuck in a few times (well, more than a few) while I was away. I woke up feeling bloated, heavy and just all around fatigued. I don’t like any of those feelings. So today- Alarm at 5am, workout with my partner 💪👊 and I already felt back on track. Post workout plenty of water and about a 13 hour fast. A @gardenoflife shake for breakfast, cucumbers (see the empty container, that was about ten slices) with my favorite @ithacacoldcrafted hummus for snack and now for lunch- a homemade salad with chicken, avocado, hemp seeds and homemade dressing. What is “Fast Food Friday Night” you ask?? It’s when mama’s tired from a long week, daddy’s at work and nobody feels like cooking. Well, there is a little cooking involved but it’s super easy and a meal I know there won’t be any complaints about. That’s a win in my book!
