It's Tasty Tuesday! I have tweaked a recipe I found online for Crunchy Asian Salad. I mix mine all together and my entire family loves it.
1/2head of cabbage shredded
1/2 head of red cabbage shredded
5 carrots shredded,
3 green onions
two handfuls of salted cashews
1 frozen package of shelled edamame
1 can water chestnuts chopped
1 package bean sprouts (opt)
1/2 C toasted sesame oil
1/2 C rice wine vinegar
1 lime fresh squeezed
2 Tablespoons freshly grated ginger
Salt and Pepper to taste
It is more economical to buy a head of cabbage and shred in food processor and easier to find cabbage some days as opposed to prepackaged. It is also earth friendly, however to save time pre shredded is fine. It would take 4 large packages to make this recipe. This recipe serves 12 so you can definitely cut it down, but we eat it for lunch and dinner and it has lots of protein and fiber, vitamins and minerals!

It’s Tasty Tuesday 😋 And our Rx Bar-inspired recipe is here! These babies are gluten free, paleo, full of protein, and as it turns out, pretty darn easy to make at home (not to mention, you’ll save some major 💰).
Blueberry Rx Bar Recipe:
1 cup raw almonds
3/4 cup raw cashews
1/2 cup freeze dried blueberries
1 cup pitted Medjool dates (about 8 or 9)
3/4 cup pure egg white protein (I used Life Balance)
1/4 tsp sea salt
2-4 tbsp water
Place the almonds, cashews and blueberries in a food processor and pulse a few times to get them started. Then, add the rest of the ingredients (water last, starting with just 2 tbsp) and hit it until well combined. You’ll have to scrape the sides often...it’s STICKY. Add more water as needed to get everything incorporated. Finish mixing by hand. Shape into a ball and wash your hands (obvi).
Line a 9x9 inch pan with parchment paper and press mixture into the bottom. Cover with another piece of parchment and press down firmly (a hardcover book will help with this). Lift the bottom piece of parchment to transfer to a cutting board and cut into 12 bars. Enjoy!
