Tapioca Pearls with Coconut Milk Lite Dessert
Ingredients:
- Thai-Choice Coconut Milk Lite 1 can (400 ml)
- Thai-Choice Tapioca Pearls 2 cups
- Sugar 2 cups
- Water 4 cups
- Melon 1/2
- Crushed Ice 1 00 g
Directions:
1. Put Tapioca Pearls in boiling water, cook 15-20 minutes until done,
and then drain
2. Let Tapioca Pearls cool on the stove-top, then cover with lid and
refrigerate until cold.
3. Make the syrup by putting sugar in water and bring it to a boil.
4. Core the melon by melon baller or cut into cubes.
5. Pour Tapioca Pearls, Thai-Choice Coconut Milk Lite and syrup in the bowl
and add the melon and crushed ice. Ready to Serve. Option to garnish
with mint leaves or cherry.i-Choice Jasmine Rice.

PINEAPPLE FRIED RICE
Ingredients:
1.Thai-Choice Pineapple Titbits in Syrup 1 can (565 g)
2.Thai-Choice All Purpose Stir-Fry Sauce 1 bottle
3.Thai-Choice cooked Rice 6 cups
4.Sliced chicken breast fillets 450 g
5.Vegetable oil 4 Tbsp
6.Red capsicum 150 g
7.Spring onion 50 g

Directions:
1.Heat vegetable oil in a saucepan or wok, add chicken and stir-fry until it is well cooked.
2.Add red capsicum, Thai-Choice Pineapple Titbits, cooked rice and Thai-Choice All Purpose Stir-Fry Sauce. Stir well and toss briefly for about 2-3 minutes.
3.Lastly add spring onion and serve hot.

PUMPKIN CUSTARD

Ingredients
1.Thai-Choice Coconut Milk 250 ml
2.Thai-Choice Palm Sugar Powder 250 ml
3.Egg 4
4.Salt 1 tsp
5.Pandan Leaves 4
6.Pumpkin 1

Directions
1.Beat the eggs and add coconut milk, salt, palm sugar in a bowl.
2.Place the pandan leaves in the bowl and press them with a mixing spoon to release the essence. Mix well until palm sugar dissolves.
3.Pour the liquid through a strainer.
Cut-off the top of pumpkin and remove the seeds then drain out the water.
4.Pour the liquid into the pumpkin and return the top onto the pumpkin.
5.Place the pumpkin in a steamer, cover with a lid. Steam for 40 minutes

Ingredients
1.Thai-Choice Rice Vermicelli 200 g
2.Thai-Choice Fish Sauce 3 Tbsp
3.Thai-Choice Som Tum Salad Dressing 8 Tbsp
4.Cooked Chicken Breasts, sliced thinly 300 g
5.Shallots, sliced 50 g

9.Red Chillies, finely sliced, includes 1-2 to taste
extra for garnish
10.Lime Juice 3 Tbsp

Directions
1.Place Thai-Choice Rice Vermicelli in boiling water for approximately 2-3 minutes until soft, then drain well.
2.Place rice vermicelli in large salad bowl, add Thai-Choice Som Tum Salad Dressing, chicken, shallots, capsicum, coriander and chilli.
Toss and season with Thai-Choice Fish Sauce and lime juice to taste. Serve garnished with coriander leaves and a sprinkling of chopped chillies.

SALMON IN RED CURRY SAUCE

Ingredients:
1.Salmon steak 1 piece (300 g)
2.Thai-Choice Coconut Milk 1 small can (165 ml)
3.Thai-choice Red Curry Paste 1 Tbsp
4.Sugar 1/2 Tbsp
5.Thai-Choice Fish Sauce 1/2 Tbsp
6.Kaffir lime leaves, thinly sliced 5 g
7.Red chillies, strips 5 g

Directions:
1.Place pan over medium heat, cook 3 Tbsp of Thai-Choice Coconut Milk until boiling.
2.Add Thai-Choice Red Curry Paste, fry until fragrant. Put salmon steak in the pan and fry until almost cooked. 3.Then, add the remaining coconut milk.
4.Season with Thai-Choice Fish Sauce and sugar, cook well until oil separates. 5.Garnish with kaffir lime leaves, red chillies and remove from heat.

Chicken, diced 250 g
Thai-Choice Green Curry Sauce 1 can (290 g)
Carrots, diced 50 g
Potato, diced 50 g
Thai-Choice Minced Sweet Basil 2 tsp
Cornstarch 2 Tbsp
Water 2 Tbsp
Ready made pie puff 180 g (1 piece)

Directions
1. Heat Thai-Choice Green Curry Sauce in a pot, add potato and carrot and stir for 5 minutes or until cooked.
2. Dissolve cornstarch in water and set aside.
3. Add chicken, Thai-choice Minced Sweet Basil and cornstarch into curry sauce, stir until cooked and set aside.
4.Lin pie mould with pastry, fill with green curry chicken stuffing and cover with pastry.

Thai Gravy with Marinated Pork (Rad Na)
Ingredients
Flat Noodles cooked 300 g
Pork 250 g
Kale 150 g
Thai-Choice Minced Garlic 1 Tbsp
Thai Choice Sweet Soy Sauce Sauce 1 Tbsp
Small Piece of Pineapple 1
Thai Choice Oyster Sauce 1 Tbsp
Sugar 1 Tbsp
Thai-Choice Soy Sauce, Naturally Fermented 1 Tbsp
Thai Choice Tapioca Flour 1 Tbsp
Vegetable Oil 1 Tbsp (Tbsp for marinate)

Directions
1. Cut the pork into 1/2 cm thick pieces. Cut the pineapple and gentle squeeze the juice to marinate with the pork. Add Thai Choice SoY Sauce Naturally Fermented, Sugar, remaining Pineapple and mix together.Pour 2 Tbsp of water and mix with Thai Choice Oyster Sauce, Thai Choice Tapioca Flour and 1/2 Tbsp Vegetable Oil.

2. Boil the Noodles until soft. Heat 1 Tbsp Vegetable Oil in a pan and add flat noodles, Thai Choice Sweet Soy Sauce and stir-fry until soft. Put in plate.

3. Set the pan over medium heat. Fry Thai Choice Minced Garlic and Thai Choice Soy Sauce Naturally Fermented. Pour 1 cup of water and then put the Kale and the pork to stir- fry until cooked about 70%. Season with Thai-Choice Sauce, Naturally Fermented, add Thai Choice Tapioca Flour (mix with 2 Tbsp of water). Gradually pour and stir quickly. Then, pour the hot mixture over noodles.

4. Serve together with Thai Choice Fish Sauce, Pickled Chili, ground Chili and sugar.

Recipe: Mixed Vegetables Som Tum

Ingredients:
Shredded Green Papaya 100 g
Thai-Choice Som Tum Salad Dressing 3 Tbsp
Chopped Tomato 150 g
Thai-Choice Fish Sauce 1 tsp
Lime Juice 1 tsp
Carrot 30 g
Chopped Chilli 15 g (or to taste)
Roasted Peanuts for garnish
Optional: Shredded Carrots, cut greenbeans, dried shrimp, Lemon/Lime juice to taste.

Directions:
1. In a bowl mix together all of the ingredients except the last two.
2. Serve on a plate and top with red chili and roasted peanuts.

#Recipe : Thai Choice Tom Yum Soup

Ingredients :

Thai-Choice Tom Yum Paste 2 Tbsp
Thai-Choice Straw Mushroom 150 g
Water 3 cups
Thai-Choice Fish Sauce 1 1/2 Tbsp
Prawns, cleaned & de-veined 16 (200 g)
Tomato, quartered 1 (80 g)
Red Chillies, coarsely chopped to taste
Coriander leaves, chopped for garnish
Thai-Choice Instant Coconut Milk Powder 6 Tbsp
Warm water 1 cup

Directions

1. Bring water to the boil in a pot.
2. Mix Thai-Choice Instant Coconut Milk in warm water and stir well to make Coconut Milk. Set aside.
3. Combine in the boiling water Thai-Choice Tom Yum Paste, mushroom, tomato, Thai-Choice Fish Sauce, coconut milk and cook for 1 minute.
4. Add the prawns and chillies, cook for 2 minutes and remove from heat uncovered.
5. Serve hot, garnished with coriander leaves.

Ingredients :
Thai-Choice Traditional Noodles 200g
Thai-Choice Dried Chinese Mushrooms 50g
Thai-Choice Soy Sauce 2 Tbsp
Thai-Choice Oyster Sauce 2 Tbsp
Chicken Breast, sliced 300g
Spring Onion, sliced 20g
Red Chilli, sliced thinly 1
Sugar 1 Tbsp
Vegetable Oil 3 Tbsp

Directions:
1. Rinse Mushrooms. Soak in warm water for 45 minutes. Drain, slice and set aside.
2. Rinse noodles well. Cook in boiling water for 5 minutes or until done. Immerse in cold water . Drain and set aside.
3. Heat oil in frying pan or wok. Add chicken and mushroom. Saute until done. Add noodles, sugar, soy sauce and oyster sauce, stir.
4. Add spring onion and chilli near the end. Mix well. Serve hot.

Straw Mushrooms 150 g
Tomato, quartered 1 (80g)
Shrimp 200 g

Chinese Parsley a little

Directions :
1. Bring water to the boil in a pot.
2. Add Thai-Choice Yom Yum Paste, straw mushrooms, tomato, Thai-Choice Fish Sauce, lime juice and Thai-Choice Coconut Milk Grade A into the pot and boil for one more minute.
3. Add shrimp and chillies and boil 2 minutes more.
4. Serve hot with cooked Jasmine Rice and garnish Tom Yum Kung with Chinese parsley.

SMOKED DUCK AND RIPED MANGO FRESH SPRING ROLLS
Ingredients
Thai-Choice Rice Paper 4-6 pcs
Smoked duck chest 200 g
Lettuce leaves 4-6 leaves
Sweet Basil Leaves to taste

Directions
1.Immerse an individual sheet of rice paper in water and remove after only a few seconds, leave it on a towel for one minute to soften.
2.Place the rice paper on a plate and put a lettuce leaf on the centre of the rice paper.
3.Arrange riped mango and smoked duck on the lettuce leaf.
4.Fold both sides of the rice paper. Then fold up one-third of paper over the filling. Continue to roll the paper to enclose the entire filling.

Side Dishes
Kapi Thod (deep-fried shrimp paste balls); a key side dish.
• Pound garlic, coriander seeds, sliced shallots, sliced Chinese ginger, and sliced lemongrass together before adding shrimp paste.
• Add catfish meat and more shrimp paste.
• Stir-fry all the ingredients together until they become cooked and dry. Knead into balls, soak them in eggs and fry to golden perfection.

Hua Chai Pow Waan (sweetened dry turnips)
• Clean and slice the dry turnips.
• Saute sliced onions in the pan and the dry turnips. Continue cooking them together, adding palm sugar and continue frying some more.
• Add an egg and continue frying. Make sure that it doesn’t dry up since it can harden the turnips and impact the taste.

Prik Yuak Yad Sai Moo (green peppers stuffed with minced pork)
• Mix the minced pork with garlic, peppers and season with sugar and fish sauce for a deeper savoury taste.
• Cut open the green peppers, clean out the membranes and seeds inside, and stuff it with the marinated pork mixture.
• Steam in high heat, wait for about 15 minutes until the green peppers change colour.
• Soak them in egg and fry to golden perfection.

Fresh Vegetables
Khao Chae should be accompanied with fresh vegetables to cut the greasiness of fried items. Prepare vegetables such as Chinese ginger, thinly-sliced fresh turmeric, cucumbers, spring onions and do carve them for an impressive presentation.
